A Tempeh -ting Packed Lunch

I’ve successfully completed my first week of classes in my masters program! No class on Friday? Yes, please.

I had another delicious packed lunch today in celebration:

That would be this fun veggie tempeh I picked up the other day!

On top of a toasted whole wheat pita, I slathered a laughing cow light swiss cheese:

Followed by half of the tempeh, sliced in half so it was more spread out:

And then a few squirts of mustard and some pickles, since they make all sandwiches more awesome:

The final topping was a huge handful of unpictured spinach! This was super tasty — and surprisingly very filling. Tempeh packs some staying power!

If you like tempeh, what’s your favorite tempeh sandwich? Mine is probably laughing cow, tempeh, sliced tomato, BBQ sauce, and spinach. Delish! And yes, I eat the tempeh raw 🙂

And my afternoon snack was some trail mix.

Matt and I are off to socialize with some of my classmates — there’s a free outdoor concert and restaurants set up selling food and drinks, sweet!

Speaking of Matt — I must share this hilarious photo of us from our friend’s wedding last weekend!

    Yum I love tempeh! I wish my grocery store carried other varieties besides plain-- I'll have to ask about that. I usually have mine raw, with spinach, pesto, tomato, and whatever else I'm feeling. BBQ sauce sounds great! That last picture is adorable :)

    My favorite tempeh sandwich is amazing! I call it BBQ tempeh, because that's mostly what it is. Fry up some sliced mushrooms and onions until soft. Cut tempeh in long strips and stir-fry in a pan with desired amount of bbq sauce (read: a lot), mushrooms and onions. When nice and hot, load up a whole wheat bun, toasted with some mozzarella on it. YUM! Love your last photo too! :-D

    I LOVE tempeh! Raw with bbq sauce is always good, but my favorite is oven roasted with salsa, onion, and swiss on it (recipe is on my site under recipe->vegetarian). MMM, makes me want to make some tempeh tonight :)

    I love tempeh! I slice mine and add it to a pan with a bit of olive oil. Season with garlic powder, salt and pepper. When brown, I add it to a pita that I've slathered with hummus, layered with tomato slices and then sprinkled feta on top!

    You eat your tempeh raw? Have you ever tried cooking it? My favorite tempeh sandwich has to be tempeh, hummus, avocado, spinach, and tomato. So good :)

    oh boy. i LOVE laughing cow cheese...but have never tried tempeh. what's it like? you and matt are so cute together :)

    I've never tried tempeh before. I keep wanting to, but I never remember to grab it when Im at the store. I LOVE that last picture! Too cute.

    my fave tempeh sandwich is more of a sweeter take... i use the raw tempeh with goat cheese (or white cheddar, or other good cheese), homemade blueberry jam (or pumpkin butter, or preserves, etc.), and spinach... u can come up with lots of delish options. sometimes i sub out the cheese for almond/peanut butter as well.

    I LOVE raw tempeh too! I still have yet to try the tempeh and jam thing though. Have you? Haha that pic is too funny!

    I always see tempeh at Trader Joe's and I'm always hesitant about buying it because I never tried it before. I think I'm gonna buy it next time. Your photos of them look too good.
