Al Fresco Lunching

Good afternoon!

I’m back in Chapel Hill and working to get caught up on all the class-related stuff I missed this week while I was in DC with my family. Lots of recorded lectures to listen to and an assignment due tomorrow! After class this morning, I came home to make an early lunch.

Earlier this week, I whipped up a Middle Eastern-inspired barley salad with white beans, raisins, pine nuts, green pepper, and various spices, so I had the last serving of that today. It’s delicious — recipe coming next week!

It’s especially yummy topped with plain Greek yogurt 🙂

On the side, I had a massaged kale salad. I LOVE massaged kale salads — you literally just drizzle on some olive oil, lemon juice, salt, and pepper, and massage it into the leaves by hand. Takes out the bitterness!

I threw some mushrooms and avocado on top, too.

To drink, I had my favorite enormous plastic sorority cup, which I now fill with water instead of beer. Oh, how the mighty have fallen 😉

I pretty much take this cup all around the house with me, at all times. I <3 water.

Dessert was some refreshing sliced grapefruit.

Time to get down to work with all this catching up I have to do! And tonight I’m going to a fun blog and yoga-related event in Raleigh — stay tuned to see what it is 🙂

Do you carry water around with you, too? When I’m out and about, I always have a reusable water bottle in my purse or backpack, and when I’m at home, various glasses of water follow me around the house 🙂 It’s become habit! Matt always makes fun of me because I’m constantly sipping water. He’ll take one enormous glass every few hours and pound it; I’m the opposite — sip, sip, sip… just a little at a time 🙂 Writing this post, I’ve probably taken like 20 sips of water, lol.

    I'm the same way. I drink water all day long, just a sip here and there. It really adds up! My only complaint is that I have to go to the bathroom every 10 seconds. :) LOL! Looking forward to the recipe next week!

    I am an all day water sipper too. LOVE LOVE LOVE your cup by the way--I was a Theta also, a founding sister at University of Central Florida :)

    I love that cup! I have the same one for my sorority and I still use it all the time because it is HUGE! I too now fill mine with water ;)

    I am trying to become a water sipper. There are cups and water bottles all over the house to prove it. But when I get caught up in something it slips my mind. Then I go for the chug approach.

    Oh my gosh, I can't believe you still have that cup! That's pretty amazing. I'm not gonna lie, last summer I finally threw out all remaining KAO paraphernalia!

      I've thrown out pretty much everything EXCEPT this cup, lol. I have another one with a different picture, too. They're just the perfect huge size so I don't have to fill them up every 5 seconds!

    I have bottles of water in almost every room of my house and I ALWAYS pack my Bobble for travel, especially airports because I am NOT spending $4 on a small bottle of water! There's almost always a bottle in my bag, especially in summer (though then I also have small cooler in my car with water and ice packs since summer in NC is crazy hot here); when on vacation I've been known to cart 2 because I drink it constantly! That alone is the reason I will always carry a medium-large purse!

    Yesterday I was grocery shopping and was dying of thirst. I went to Wendy's and got their berry tea (unsweetened) and it was superb. The have it sweetened, but I don't like sweetened tea. Try it, you'll love it.

    I'm the worst (best?) about carrying water around. I won't leave on a trip without hauling my giant 2L water bottle with me, and I've become rather notorious for leaving water glasses around. If the aliens from "Signs" ever show up here, I will be very well prepared! As a slightly off-topic shout out, I was a little amused to see your cup. You belong to the same sorority as my twin sister.
