Almond Butter French Toast with Cinnamon Apple Yogurt Topping

Can you believe that until this morning, I had never made french toast?! A travesty, since I LOVE french toast!

Feel free to drool. I’m pretty sure the people who saw me out on my balcony taking pictures of my food in my pajamas did.

Almond Butter French Toast with Cinnamon Apple Yogurt Topping

Ingredients:

(serves one)

  • 2 thick slices of whole wheat bread
  • 1/3 C whole milk
  • 1 egg
  • 1 tsp. almond butter
  • 1/2 tsp. vanilla extract
  • 1/4 tsp. cinnamon

Instructions:

1) Mix all french toast ingredients (except bread) in a large, deep bowl or pan. Make sure it’s mixed well (you might want to whisk the egg first, separately), then place the two pieces of bread into the liquid. (I had to do this one piece at a time since my bowl was too small!)

2) Let the bread sop up the mixture for about a minute, then flip to the other side, waiting another minute.

3) Once all the liquid has been absorbed into the bread, place the bread in a skillet (coated with cooking spray) on medium heat. Cook a couple minutes on each side, until lightly browned.

4) Serve topped with maple syrup and more cinnamon, OR with my Cinnamon Apple Yogurt Topping!

Cinnamon Apple Yogurt Topping Ingredients:

  • Half an apple, chopped
  • 1/4 tsp. cinnamon
  • 1/3 C whole milk plain yogurt (Greek or regular)
  • 1 tsp. maple syrup

Instructions:

1) Place the chopped apple into a microwave safe bowl and microwave a minute or so until apple is soft.

2) Add in other ingredients, stir, and pour over french toast!

    I love French toast, but now I want to make it just so I can eat that topping. I'm bookmarking this. I think it'd be great on top of pancakes, too.

    I love French Toast, even though I've only ever had it once when I visited the States, and I'm pretty sure there wasn't anything healthy about it! Yours looks good. Maybe I should give it a try.

    I was too excited to make this for brekkie this morning - i've never cooked french toast for myself, go figure! I subbed peanut butter for the almond, because its what I had around. Also, it turns out that really thick, solid bread is pretty key for making this recipe work... not regular sliced white loaf like I used. Uh oh. Sloppy mess of my plate aside, this tasted great, and i loved all the protein and minimal added sugar! thank yooooou!
