Attune Foods Brunch Party & Breakfast Kit Giveaway!

Hello and happy Monday!

And by happy Monday, I really mean can we go back to the weekend instead? Mine was particularly fun because on Saturday following my 7 mile training run I hosted a brunch party at my place for my grad school girls! (We missed you, Elder & Kort!)

The occasion? Attune Foods sent me an awesome breakfast party kit! It included 6 go bowls (pictured below) to give out as party favors and a bunch of boxes of cereal to use to create some fun baked goods, too.

I LOVE those go bowls — perfect size and great for packed yogurt and fruit. Love the screw top, too! Plus, they are BPA free and made out of recycled yogurt cups.

I decided to do a potluck brunch since the girls and I usually like doing potlucks — more fun for guests to participate, too! My responsibility? Baked goods, of course. 🙂

I had fun perusing the recipe section on the Attune Foods website to decide what to make — they have some awesome stuff up there! I decided to make two different baked goods — one using one of their recipes and one a creation of my own.

Here’s the recipe I used from their site: Uncle Sam Vegan Walnut Pumpkin Bread.

I would never have thought to use cereal in a bread recipe — loved it! The only change I made was using regular milk instead of dairy free.

And for my own creation, I made Peanut Butter & Jelly Muffins!

These were amazing — so flavorful! I used Erewhon Rice Twice cereal in it and loved it — fun texture AND the batter crackled and popped. 😉

The girls brought all sorts of delicious food for us to enjoy, too. Elle made a yummy egg and veggie casserole topped with cheese and bacon!

Anything topped with cheese and bacon is a win, let’s be honest. Elle was smart and baked half of it at home so it wasn’t runny, then added the cheese and bacon on the top and baked it the rest of the way at my place. Genius!

Libby brought a French press and made us all lattes! They were even better than Starbucks. 🙂

She also brought some roasted Brussels sprouts for a little veggie action — SO good.

He actually used our panini press to cook it and it worked out perfectly since most of the fat was able to drip off!

And of course I sent the girls home with their very own Attune go bowls! Being in grad school = packing a lot of breakfasts and lunches = they were clearly pumped.

    I love your potluck brunch idea - I'm always looking for a reason to get my girls together! Whenever we go on family/group vacations I love bringing an egg casserole, prep it before we go and just reheat in the morning for everyone to enjoy! I always search for a new recipe every time and usually end up putting my own spin on things.

    Looks like a fun party! There is a restaurant here that specializes in brunch and lunch called Press 102 (specialize in "pressed" dishes...paninis, espresso, etc). My all time favorite brunch item there is the "102 Chicken & Waffles Panino" with espresso infused maple syrup! Absolutely decadent and sinful, perfect after a girls night out! I fell in love with this dish the morning after my 30th birthday...following a big party and lots of champagne! (Press 102 is here: http://press102.com/menus) But, if I'm cooking, I'm big on baby spinach and feta omelets or baking as a casserole. No special recipe, I just add garlic, onion powder (or real, minced super fine), and dry mustard to eggs, spinach and feta (sometimes I use plain, sometimes the tomato basil crumbles). Depending on who is eating I may add diced tomato, mushrooms, green peppers, etc. Bake slightly undercooked and remove from heat, let set and then it's not rubbery! If you want more cheese go with shredded swiss or jarlsberg.

    A diner in my town has the best caramel french toast. It is simply to die for. They also make an amazing Italian Hash. I love to make scrambled eggs with a pile of veggies and cheese. I had found a recipe over on CarrotsNCake for Mini tomatoe fritattas a few months ago, and that is a regular in my kitchen too. I can't wait to see the recipe for your muffins.

    I love fannetastic food recipes:Scrambled Egg Muffin, Walnut Pumpkin Bread, and Zucchini Muffins, all of which I have made. Delish. The bowls are perfect when the grand kids are running late and I can send them off to school with a bowl of cereal to eat in the cafeteria waiting for the homeroom bell to ring.

    I like things that everyone can customize at a brunch party like bagels with spreads and toppings and pancakes and waffles with different toppings. Everyone gets just what they want and it's fun. Those bowls look great!

    Roasted brussel sprouts?! Yum! They are my new favorite thing! Thinking of typical brunch fare. I generally make and Egg Bake of some sort usually loaded with sauteed veggies or fresh fruit salads.

    I love EVERYTHING about brunch, but the most decadent recipe I ever made for one was Paula Deen's Baked French Toast Casserole that has a praline topping...umm...yeah...not so figure-friendly, but the best thing I've ever had! For healthier options, I'm all about basic oatmeal w/ toppings bar! Most times, simple is better =)!

    Definitely challah french toast: soak some day old challah in a couple eggs, a splash of milk, a dash of cinnamon and probably a teaspoon of vanilla until its absorbed the liquid and cook on low heat until crispy on the outside! Drizzle with some maple syrup, toss on some blueberries and enjoy!

    Homemade peanut butter oatmeal is my fave! I'm not gluten free but I use gluten free oatmeal because it has such a great creamy texture. Then I add a hefty amount of peanut butter, cinnamon, and clove -oatmeal perfection!

    My fav brunch dish is dependent on my mood -- sometimes I crave thick cinnamon-battered french toast, and other times I want a more savory potato, onion, and random veggie tofu scramble.... Aaand now I'm hungry for both, lol. ;)

    My favorite brunch food is bacon!! I don't eat it on a regular basis but at brunch I can't pass it up! The runner up is eggs benedict. I have no clue how to make it so I always order it when I'm out!

    The pumpkin bread looks so pretty and delicious!! And I think my boyfriend and his friends would be beyond impressed if I made those peanut butter and jelly muffins! Will have to try them when you post the recipe :) My favorite brunch food is cinnabons!!!! I rarely make them so the more likely brunch is pancakes :) I agree with Marie above, bagel & lox is amazing! I guess I can't just pick one thing ha

    My favorite brunch food is either homemade biscuits w/jam or quiche from the cafe near our house.... I perfected the biscuits thanks to lessons from my mam-maw since I could stand on a chair next to her in the kitchen, but I'm still working on the quiche..... yum.

    My mom makes this French Toast casserole that is basically butter and sugar with a few pieces of bread floating in it. So good and so rich, but so NOT healthy that more than a bite is too much!
