In honor of October and the fact that the weather has taken a turn for the cold (loving it!), I thought it would be fun to share my favorite fall inspired recipes on the blog. Enjoy!

Exactly how it sounds — tastes like pumpkin pie in a bowl, but it’s healthy 🙂

I love this soup and make it all the time! It’s delicious, nutritious, and super easy to throw together. It’s also a great way to use up extra veggies sitting around in your fridge!

A delicious and healthy twist (no mayo here!) on classic chicken salad. Try it with dried cranberries or apples instead of grapes, too!

An old favorite. Packed with flavor, not calories.

~ Sweet Potato Whole Wheat Bread Pudding ~

Made with 100% whole wheat bread, skim milk, nutritious sweet potato, no butter, and no oil, but tastes like a decadent dessert. Win!

What are you most excited about now that fall is here? I’m particularly pumped for pumpkin everything (can’t wait to carve pumpkins, too), cute boots and jeans, hair that isn’t enormously puffy because of humidity, haunted forests, sweatshirts, good apples, crunchy leaves, and rekindling my love for hot tea. 🙂

    I will definitely save this page, all of the recipes look wonderful! I just made a apple craisin bread pudding that definitely made me do a happy dance! I love Fall, and making anything with squash, pumpkin, and apples:-) Just found a pumpkin mousse recipe, I may need to try that next:-) Hugs, Terra

    My favorite easy & healthy fall recipe was the sweet potato black bean chili I made the other night! It was so comforting for the cold, rainy day too.

    All I can say is yummmmmmmmy. I love comfort food. Fall is my favorite time of the year. It makes me feel all fuzzy and warm.

    These recipes all look delicious! I'm excited for apple cider and reading curled up on the couch, carving pumpkins and roasting pumpkin seeds, and dressing up for Halloween and all the yummy pumpkin pie made this time of year!

    I'm excited for cooler weather. I can finally pull out my scarves and maybe some of my light jackets for evening (very hot natured). I also love apple cider, butternut squash soup, tomato florentine soup, boots, being able to leave a bottle of water in the car and it not be boiling when I get back in, open windows, "porch parties", and soon...extended shopping hours!

    All of these recipes look absolutely fantastic. I was looking for a baked good to make as a thank you for my friend and I think your muffin top recipe looks perfect! Some of my favorite fall things are hot chocolate, bonfires, hoodies, apple picking, and corn mazes!

    Your recipes all look so fiber-licious! Yum! Fall is my favorite season and I love getting to incorporate so many fall flavors into my meals. Pumpkin, sweet potatoes, squash, and even a little cinnamon to top my bowl of Kellogg's FiberPlus(R) cereal in the morning.
