10 Favorite Easy & Healthy Fall Recipes

In honor of October and the fact that the weather has taken a turn for the cold (loving it!), I thought it would be fun to share my favorite fall inspired recipes on the blog. Enjoy!

~ Pumpkin Pie Oatmeal ~

Exactly how it sounds — tastes like pumpkin pie in a bowl, but it’s healthy :)

~ Spiced Butternut Squash Muffins ~

No butter, no oil, just deliciousness.

~ Pumpkin Bean Dip ~

This is delicious, easy to make, and a huge hit at parties when you want to serve something more creative than hummus!

~ Veggie-tastic Minestrone Soup ~

I love this soup and make it all the time! It’s delicious, nutritious, and super easy to throw together. It’s also a great way to use up extra veggies sitting around in your fridge!

~ Pumpkin Cranberry Muffin Tops ~

Muffin tops… that won’t give you a muffin top :)

~ Sweet Potato Lentil Chili ~

One of my absolute favorites.

~ Comforting Pumpkin Quinoa ~

Simple, nutritious, and delicious.

~ Autumn Chicken Salad ~

A delicious and healthy twist (no mayo here!) on classic chicken salad. Try it with dried cranberries or apples instead of grapes, too!

~ Pumpkin Muffins (or bread) of Deliciousness ~

An old favorite. Packed with flavor, not calories.

~ Sweet Potato Whole Wheat Bread Pudding ~

Made with 100% whole wheat bread, skim milk, nutritious sweet potato, no butter, and no oil, but tastes like a decadent dessert. Win!

What are you most excited about now that fall is here? I’m particularly pumped for pumpkin everything (can’t wait to carve pumpkins, too), cute boots and jeans, hair that isn’t enormously puffy because of humidity, haunted forests, sweatshirts, good apples, crunchy leaves, and rekindling my love for hot tea. :)
