Baked Sushi & Running Buddies

Have you guys ever heard of BAKED sushi?!

Basically, it’s regular sushi… but it’s baked, not raw! Genius, right?! This could be the solution for those of you that are scared of raw fish 😉

Last night I met my friend Ashley for dinner at one of my favorite Virginia sushi restaurants, Koi Koi. 

We shared an order of the “Baked Salmon” roll and the “Kamikaze” roll (on the left — it included eel, my favorite!). We also got an un-pictured veggie roll.

Ashley is going on vacation on Sunday so this is the last time I’ll see her before I move to NC in 2 weeks! Sadface. Obviously I’ll be back to visit, but still!

Ashley was my long run/training buddy for all of my races in the past year:

  • The Army Ten Miler in the fall
  • The St. Patrick’s Day 8k

  • The Cherry Blossom 10 Miler in the spring
  • My first Half Marathon in June!

I’m going to miss her! 🙁

Running is such an awesome way to get to know someone better. We’ve been friends for years, but it wasn’t really until the past year that we became so close through all of our long run dates! 🙂

Anyway!  In other news, I just had the most epic snack:

A third of the most delicious, ripe cantaloupe, filled with a spoonful of nonfat plain Greek yogurt and topped with half of a crumbled Super Charge Me! cookie. My life is complete.

Or, at least, it would be if my stupid BioChem final was over. Back to studying… my final is on Friday morning. Gah!

    i think it's the combination of testing your body & the mental struggle to keep going that brings you closer to someone during a run. is it weird that running w/ my dog makes me feel closer to her? ;)

    I WISH I could find a running buddy! I don't really have many friends in my town (haven't lived here long), and none that run. Every day at the gym I debate "hitting on" girls on the other treadmills.

    I've never heard of baked sushi but it is a fantastic idea. I'm one of those people who do not like raw fish so this would be great!

    You never had cooked sushi??? It's incredible right? I mean, I love the raw stuff, but a good cooked roll is just amazing sometimes! ;)

    My husband is my running buddy and I love getting up early on Sat mornings, having a little breakfast and then going out for a great run. I love cantaloupe and your snack looks delicious!

    I met almost *all* of my friends (including D) through running in DC! It definitely does wonders for a friendship when you have something like that in common, and you spend hours chatting away while the miles tick by. :) Um, I miss our run dates!! Sadface.

    Baked sushi sounds like a dream! It looks so good. I has sushi yesterday too, however, it was not baked, so now it seems a little lackluster. I am excited to see you next weekend! :)

    OMG that sushi looks SO yummy!!! And that cantaloupe snack is a great idea! Russ and I decided to follow the Jillian Michaels 'Master Your Metabolism' book and I'm running out of healthy tasty food ideas to incorporate to our diet. ;)

    The baked sushi looks sort of like a blow-torched sushi that I love. The restaurant I frequently visit serve seared eels and salmon. They taste incredibly good.
