Dinner Date + Morning Workouts

Hello from the train on the way to NYC! I’m heading up for a girls weekend reunion with my UNC grad school dietitian friends – I can’t wait to see them! This is the first time we’ve been able to get our whole group together in years – long overdue. 🙂

Speaking of good friends, last night I had my college friends Kathleen and Sarah over for dinner. Sarah hosted us last month and I volunteered to be next – love this new tradition we’ve started.

I decided on a soup and salad combo, and while I chopped veggies we hung out in the kitchen chatting and snacking on a little cheese and crackers. Cabot, obviously! We figured we might as well start fueling for the Cabot-fANNEtastic Cherry Blossom 10 miler team a little early. 😉 They are both joining my group for the race!

I made a Thai coconut chicken soup I was testing out for the blog – stay tuned because I’ll be sharing the recipe next week! 🙂 It came out delicious.

The side salads were a simple combo of beets, arugula, and avocado with a homemade balsamic vinaigrette (minus the garlic) and some salt and pepper. Yum!

In other news, check out the beautiful sunrise that my track buddies and I were treated to yesterday morning! The sky was basically on fire – it only lasted a few minutes but it was amazing.

Also amazing? On the other side of the sky, there was a rainbow! Crazy. We’ve had such weird weather this week – on Wednesday night there were tornadoes and crazy thunder storms!

We did mile repeats during which we had to run the last lap faster than the rest – oof. Great workout, as always! After 3 mile repeats, I did two 400’s (one lap) at a speedy pace. My watch just includes the workout, as usual! We also had a group warm up and then I did about a mile cool down jog after with the others.

As for this morning, I was up early and at Definitions via ClassPass for their 6:15am boot camp with Kathleen and Chelsea! Wanted to get in some movement before sitting on the train for hours. 🙂 Worth the early alarm, as always! No sweaty selfies this week because I had to rush out right after it finished to make sure I had time to get home, shower, and make it to Union Station. I ended up making it to the train station with enough time to grab a latte and a yummy lunch salad to enjoy later on the train. Win!

    Thank you thank you. After your salad a couple of weeks ago with beets I decided to try making fresh ones (so easy it's ridiculous I never tried it before). And they were delicious! I am now eating them a few times a week in salads and as a side. What a great addition they have become. Enjoy NYC, we're supposed to have great weather this weekend.
