Easy Eats + Baby Snowsuit

Morning guys! I’m still riding the toast train – loving the crunchy bread right now! Yesterday’s lunch was BLTs – actually, BLs, since all the tomato got eaten the day before. Bummer! Still yummy though. Plus some raw veg on the side. Raw green peppers are my FAVE – love that crunch and they are so juicy.

And this morning I had another of my new fave creation: toast + cottage cheese + smoked salmon. Don’t knock it till you’ve tried it! So good. I was missing the tomato, though – must get more ASAP!

As for last night, we mixed it up from toast and made a variation of my Sheet Pan Asian Salmon! LOVE that recipe – so easy and delicious. The sauce is my fave – we didn’t have fresh ginger or green onions so we left them out and it was just as good. We also used honey instead of maple syrup just to mix it up – also just as good.

We are still making our way through our freezer stash of meat/fish – this was the last of the salmon! If you’re wondering why we have so much frozen protein, it’s because when I was pregnant we’d buy or get a delivery of ingredients for dinner and then on a bunch of nights by the time dinner rolled around I would NOT be feeling whatever we were supposed to make. Sometimes Matt would make the dish anyway and just eat it himself, but other nights we’d end up eating the other ingredients in simple/more pregnancy friendly dishes, and would freeze the protein for later. Nice to finally use it!

I will leave you with your daily dose of cuteness – Riese in her little snowsuit that was a gift from grandma! So cute, right?! I had a dentist appointment yesterday about a mile from the house so Matt, Riese, and Freyja walked me there and then they walked back solo while I had my teeth cleaned. We added a hat and a blanket on her and she seemed quite cozy even though it was cold!

I’ll be back tomorrow to talk more about yummy dinners we’ve been eating lately – stay tuned! As for today, we have more nanny interviews and are checking out a small in-home daycare near us tonight, too. So many options, although it’s hard in the DC area because all the really good nannies and in-home daycares aren’t available for long… makes me feel a lot of pressure to act quickly! Eek.

    You should visit in home day cares when they are actually in operation so that you can see the other children and really confirm that the provider will have the ability to care for an infant while dealing with other children. In home day cares are the least regulated kind of childcare and there is very little oversight, which isn't to say that there aren't absolutely wonderful providers out there, just that you really need to thoroughly investigate them.

    I am sure you know this, but just in case, do not put the baby in the car wrapped up that way. I know this time you were on a walk, so it was ok, but big warm snowsuits and coats are not recommended for use with babies in vehicles. We are in Iowa, where it is now below zero out. I hate not being able to put our 4 month old into something warm and cozy for car travel. We use blankets on the outside of the car seat straps, and a cover for the whole thing. She is beautiful, by the way.

      Yes, we do know that, but I appreciate you sharing just in case! For the car we've just been doing a light onesie and then putting a blanket on her once the car seat is all hooked in. Thank you <3

    That snow suit is adorable!!!! Good luck with the childcare hunt! I feel for you, it can be very stressful trying to figure out the best fit/person for your baby.

    Oh my gosh that snow suit is adorable! What a little doll! I bet it is so great to have your normal appetite back!! I hope the nanny interviews and in-home daycare meeting went well. Finding child care is so stressful. We toured some daycare centers when I was around 14 weeks pregnant and it was so weird to be making child care decisions before we even met our baby. But most places had a long wait list, some as much as 12-18 months which is crazy. We picked a daycare but we still don't know if they will have availability when I go back to work. I'm hoping they do, otherwise we'll get a short-term nanny to cover the gap.

      Yeah, all the big, official daycares here have OUTRAGEOUS waiting lists - I would have had to get on them when I was like 20 years old. So ridiculous. The in-home ones don't seem to have openings that often either, though, and when they do they go very fast! I think it's going to be a nanny for us... we'll see! Interviewing 2 more today.
