Easy Hummus Toast Recipe with Smoked Salmon and Soft Boiled Eggs

We all know that hummus is awesome as a dip – but have you tried it yet as a toast spread?

In the past few months, hummus toast has become one of my favorite meals (and snacks) – and one of Riese’s favorites, too!

I’m partial to hummus toast for breakfast, usually topped with eggs and any veggies I have on hand. But I didn’t try it with smoked salmon until recently and guys, you HAVE to try this. It’s so delicious – a fun spin on the usual lox bagel breakfast!

There isn’t a full “recipe” for this feast; though I’ll share a general guide below, you can feel free to get creative with the toppings based on what you like/have on hand. The only thing not to skip is the hummus, of course!

In addition to the pictured tomato, onion, and micro-greens, cucumbers, radishes, and capers would go well flavor-wise with this combo if you want even more topping options. You can also skip the egg to make this meal even faster and easier – or enjoy it scrambled or fried vs. boiled. Whatever works – you do you, friends!

Easy Hummus Toast with Smoked Salmon and Soft Boiled Eggs

This fast and easy hummus toast will be your new favorite breakfast. Feel free to switch up the toppings and get creative!

Ingredients:

  • 2 large eggs
  • 2 slices whole grain bread, toasted
  • 4 tablespoons hummus
  • 1 small vine tomato, sliced
  • 3 oz sliced smoked salmon
  • ~2 tablespoons finely diced red onion
  • ~2 tablespoons mixed micro greens or sprouts

Instructions:

1. To soft boil the eggs: Fill a pot with about 4 inches of water (enough to cover the eggs once they're dropped in). Bring water to a boil and slowly lower in the eggs using a slotted spoon. Boil the eggs for 6 minutes for soft yolks. Remove eggs from water and immediately rinse with cold water, then peel eggs under running water.

2. Meanwhile, divide the hummus, tomato slices, and smoked salmon between the two slices of toast. 

3. Top each piece of toast with a soft-boiled egg cut in half. Garnish with red onion and greens.
