Winter Wonderland Weekend

Hello from a snowy DC! 

It’s beautiful out there, but pretty messy!

Besides snow fun, this weekend we enjoyed lots of avocado toast…

Riese actually likes avocado toast now which is fun – and she will even eat a few bites of fried egg, but just a few. 😉

Scrambled eggs are still hit or miss – I scrambled them in coconut oil because Riese loves coconut oil flavor, though, and that helped. Hummus toast, on the other hand, is always a big hit – I usually top it with hemp or chia seeds too for an extra nutritional boost. In the bottom right that’s a leftover homemade butternut squash and chicken sage meatball – I have them in the freezer and pop one out and microwave it every once in awhile to add to Riese’s meals. 1 year old lunch ideas

Our other eats were pretty simple this weekend. Matt grilled steaks on Friday night for dinner, and we enjoyed the leftovers the next night in the form of salad. Love a good peppery arugula salad with steak on top! Plus cucumber, tomato, feta, avocado, peppers, and my usual homemade balsamic vinaigrette. 

I needed more carbs in my life after that salad, though, so I made some popcorn and topped it with nutritional yeast (affiliate link) – it’s the best popcorn topper – so “cheesy”! I find I don’t even want salt. We are still loving the popcorn I wrote about in this “healthy one-handed snack ideas for parents” post last year, btw. 

I’ve also been snacking on a variation of my oatmeal raisin energy bites — yum. My friend Karen made me some similar snack balls recently as a thank you for something I helped her with, and we pounded through them so I made some more! Always helpful to have fast and easy (and filling) snacks on hand. Riese likes these, too. 🙂

Fitness over the weekend didn’t include my usual run due to snow; instead we took a short snowy walk with Riese to get some fresh air! She was very interested in all the white stuff.

Matt and I also got in back to back sessions at home with Paul from Capital Energy Training on Saturday morning before the snow started. I’m feeling stronger and more balanced after just a couple months of working with him again – hizzah!

    Looks like a very snowy weekend! Not quite the Snowmagedon, but serious! And well done on getting the strength and energy back. Quite a milestone!

    What a fun weekend of awesome eats and pretty snow! I need to make some energy bites really soon. They're always so awesome to have in the freezer. I also still really need to make those butternut squash chicken meatballs! We have a butternut squash, so hopefully I can make them soon. Have a great day!

    What kind of bread do you use for Reese's toast?

      It varies, but a few fave brands are Ezekiel bread, Dave's Killer Bread, and local Lyon Bakery bread. I usually go for a whole grain/wheat/seed version.
