Friday Randomness

Hey guys! Popping in for some Friday randomness to kick off your weekends. Enjoy!

1) I got my hair cut yesterday! It was LONG overdue, and earlier this week I had one of those moments where I was suddenly like: “I can’t handle going ONE MORE SECOND without cutting my hair.” My head feels so much lighter! 🙂

Having a lighter head totally made this morning’s long run a little easier – it actually was noticeably different in terms of how much weight/bouncing my bun had going on. I tackled my big 22 miler – I’ll share a full recap on Monday!

2) I made a really yummy wrap creation earlier this week. It was good enough to share!

We had some leftover tortillas on hand (from making my Mexican Lasagna last week) so I’ve been making wraps for lunch as a fun way to mix it up from my usual grain salad bowls. This week’s creation, which was so good I made it twice, was hummus + chicken + baby kale + sauerkraut (it’s good, I promise! adds a nice crunch). (Related: why you should start eating sauerkraut)

Sabra sent me some of this fun new honey mustard spread (made with hummus!) to try so I threw some of that in there too! Thumbs up – added some good flavor to the mix! #allthehummus

3) Want to strengthen muscles that help your running? Throw a band around your ankles and take steps sideways while keeping your core engaged. Paul from Capital Energy Training had me doing this at our session this week – such a great cross training move for runners!

Monday and Tuesday were both rest days because of my busy travel schedule so Paul and I did a more active (vs. the usual restorative/stretching/mobility focused sessions) workout this week – fun to mix it up!

Matt and I are heading out of town this weekend – spending a couple low key nights in the Virginia mountains to celebrate our 4 year wedding anniversary, which is coming up on October 13. <3 I can’t believe it’s been 4 years!

See you guys back here on Monday! Looking for something cozy to make this weekend to take advantage of the cool fall weather? Try my Sweet Potato Lentil Chili or Butternut Squash & Turkey Chili! I’m also eyeing these Wicked Good Pumpkin Protein Pancakes from my friend Tina… they sound amazing!

Any fun outdoorsy/workout adventures or especially yummy food experiences planned for this weekend?

We mix it up some but the one we buy most is the organic Farmhouse Culture brand - theirs is so good!

After reading about this I decided I had to make my own version of your Mexican Lasagna this weekend. I've been craving nachos so thought this would be a much better compromise ;-). Vegetarian refried beans, sauteed peppers & onions, chopped meat, salsa, olives and pepper jack cheese with the corn tortillas. I'm so excited to make them, thanks for the great idea!

sauerkraut on wraps/sandwiches is legit awesome! the heavy bun/ponytail struggle is REAL. i'm getting to that point, too. feels amazing to take it out, like literal weight off; ha! this weekend...short run compared to all those running Chicago marathon, which i'll be watching. so excited for all the runners!

The feeling of getting your hair cut and having a lighter head is so nice. Small thing that makes a big difference. Happy anniversary! My parents are high school sweethearts and their 30-year dating anniversary is Monday :) Enjoy your trip!
