A Veteran’s Day WOD + An Easy Dinner with Packed Lunch Leftovers

Hello and Happy Veteran’s Day! A big thank you to the brave men and women who have served our country, and to their families, too! I hope you take some time to thank a veteran you know (or don’t know!) today. Anyone in DC going to the tribute concert down on the national mall?

My Crossfit gym got into the spirit this morning – we did a special tribute WOD under these flags:

The workout was a good one! We warmed up then did “Three Wise Men” —

The pull ups and wall balls were especially tough! I wasn’t anywhere near the Rx (recommended weights) for the workout, but I did my best and that’s all that matters, right?

On the food front, I have a new favorite super easy dinner.

To make this, just toss some chicken breasts into a pan with a jar of salsa. Add whatever veggies you like (I added a bunch of peppers), then cover the pan and let cook on medium. When the chicken is almost ready (usually about 10 minutes or so later), stir in some canned drained/rinsed beans (we used kidney beans but black beans would also be good) and a handful of spinach or kale.

I made extra so I was able to have some of the leftovers for lunch yesterday. There wasn’t a ton left, so I added some extra spinach to the mix, plus some brown rice (90 second microwave) and some leftover roasted brussels sprouts with bacon. It ended up being a really good combo! I love “everything but the kitchen sink” bowls like this.

To finish off lunch, I also packed some grapes. As for afternoon snacks, I enjoyed another Nourish Snacks packet and a cinnamon apple crisp ALT Larabar. Love the ALT bars – it’s basically a normal Larabar but with pea protein added. I also ended up eating an unpictured Justin’s almond butter packet. I feel my best with lots of afternoon snacks and lighter dinners. 🙂

I enjoyed lunch sitting out in the sun in Dupont Circle! The weather has been so nice here this week – although I hear the frigid temps are on their way. Boo!

I’m working from home today since I think the metro will be complete madness with all the Veteran’s Day stuff going on downtown. I enjoyed an old fave – my protein packed flour free breakfast pancake (<—click for recipe) this morning with some frozen wild blueberries and my standard whole milk latte. Yummy!

And now, better get back to it! Today is mostly going to be dedicated to working on the sports nutrition e-book I’m co-authoring with Jason. We’re now planning to release it in January – it’s coming along quite nicely! Have a good one, friends!

    I love cleaning out the fridge to make a quick dinner or lunch. Sometimes it's fun to eat a bunch of different flavors... which is why I think I enjoy salad/hot bars so much! I never knew about the ALT version of Larabars - need to check those out!

    I seriously need to try CrossFit at least once. It looks like a such a good time. I totally agree about the weights thing. Focus on your good form= great workout and developed strength overtime. I haven't tried Justin's recently. I really like Nuttzo. Ever tried that?

    Love the protein pancake, Anne! I tell all my friends to try them. Love Crossfit, too! When you do crossfit, is that all you do for the day? I often feel the need (mental) to do some more cardio after a shorter crossfit wod. I'm used to running for an hour or more at a time though, obviously not at the same intensity as a crossfit wod. It's a mental hang-up that I think I need to get over. was wondering your thoughts on this.....

      Yes, that's all I do for the day! I might do some walking breaks during the day just to get out and about since I feel best if I get outside at some point during the day, but that's all. Even though the workouts are short, they are intense, and it's good to mix it up - every single workout doesn't have to be a long cardio session, right? :) Good to give your body something different!
