Healthy Egg Salad Sandwich + Recent Workouts

Hello, hello! In case you missed it and are working on planning your menu for next week, check out my post from yesterday: Best Healthy Thanksgiving Recipes.

In the meantime, here’s another favorite healthy and easy lunch idea: egg salad with a twist!

The trick is the same as my tuna salad: mix the egg with some very ripe avocado and a big old squirt of dijon mustard, et voila. Delicious and satisfying sandwich filling, ready to go!

We’ve had a lot of hard boiled eggs around this week because Matt cooked a bunch of eggs on Sunday to put together little breakfast packs for himself. Good idea, right? Try it! 🙂 He used a container leftover from a Starbucks protein pack – genius.

Perfect balanced breakfast to go: egg (protein), nuts (healthy fat), and fruit (carbs + tastiness). Matt went for walnuts and a mix of applesauce and grapes, but try it with your own variations and let me know how you like it! Anyone else have any good grab and go snack pack type breakfast ideas to share with Matt? 🙂 We’ve been trying to break him of his “grab coffee and race out the door, then don’t eat til lunch” habit…

On the fitness front, I’ve been getting in some solid sweat sessions! On Tuesday night, I hit my standard fave Edge Yoga after work via ClassPass – love ending my day with a little yoga. Wednesday morning, I was up early for another ClassPass adventure: the boot camp at Definitions with my friend Chelsea.

We’ve been to this class a couple times before with a different instructor (DeShay, who is great); this time, we tried Earl’s class. He was upbeat and motivating and led a great class! Love this gym, and it was so fun to see Chelsea again! She’s been out of town for quite awhile and I missed her. 🙂 We chatted away while getting a dynamic and well rounded workout – there are 3 stations and you rotate through twice, changing the moves each time.

I also love their inspirational quotes. 🙂

As for this morning, I met up with my track group! We did a warm up led by the coaches (heel walks, but kicks, side shuffle, high knees, etc.), then ran 1 mile at a decent clip, and then headed to a nearby hill to do hill repeats. We did the long version of the hill today, so it was about 0.4 miles up instead of 0.2, and man it was tough. They had us do it 4 times – the first and second hills were back to back, then we rested a few minutes and did the final two hills back to back. So tough! I forgot to turn on my watch until near the end of the mile on the track, but here’s the rest of it. 🙂

And now, buckling back down on this rainy day! Lots of things on the to do list before the upcoming holiday – better get to it. Have a good one, my friends, and check back in tomorrow for another great Thanksgiving appetizer recipe idea!

    ha, that totally looks like a purchased starbucks snack thing! i like having an egg + larabar or oatmeal w/scoop of cashew butter. basically something thats easy to pack adn has a little protein and fat.

    Great idea to re-use the Protein Box! Some other grab and go breakfast ideas are: 1. String cheese or mini babybel + apple (or other fruit) + granola bar 2. PB&J on whole wheat + HB egg & fruit 3. Greek yogurt container + nuts + granola bar & piece of fruit 4. Cheddar and apple sandwich on whole wheat + fruit and/or yogurt 5. Overnight oats + nuts & fruit +HB egg 6. Smoothie + granola bar

    Hi Anne - I love the idea of reusing the protein boxes. They are always so delicious and I am tempted whenever I am at a Starbucks to pick one up. Do you have any other suggestions to replace the eggs? The cholesterol in eggs is a big reason why I ask.

    Even something as easy as pre made tiny bags of trail mix to throw in the pocket and eat on the train ride is better than nothing for breakfast! :) If I'm really rushed I at least scarf a yogurt on the way out the door! Because one cannot live on croissants alone ;)
