Homemade Pizza Night & New Recipe Pages

Good afternoon!

It’s a beautiful one here in NC — 60 and sunny! Matt was sick most of the weekend but is starting to feel better today, so we took a nice walk in the sunshine 🙂

It’s been a relaxing but fun weekend — last night was homemade pizza night at Elle’s!

We like taking prom-style photos, don’t judge. (We missed you, Libby!) There were boys invited for the evening festivities as well but sadly Matt wasn’t feeling well enough to join. But he was sweet to make me go anyway since he knew I wanted to 🙂

The pizza was deeeeeelish — and whole wheat, too! We used the prepared whole wheat pizza dough from Trader Joe’s — just roll it out and top with deliciousness! Super easy. Everyone brought different toppings so we had fun mixing and matching!

YUM! I brought a tasty mixed green, beets, goat cheese, and pine nut salad for everyone to enjoy on the side:

And my friend Steph brought this awesome red pepper polenta with sautéed mushrooms. So good!

Dessert? A sliver of this completely epic Red Velvet Cheesecake that Elle made. I think she’s posting the recipe tomorrow!

Yum, yum! I’m off to run some errands and get some school work done. Matt is sticking in town this week and working from home since he’s still not feeling super awesome — it’ll be nice to have him around 🙂

    I just love TJ's WW dough. We usually throw as many veggies as we can possibility fit on it with mozzarella and goat cheese. :) Homemade pizza beats the pants off delivery.

    I love Trader Joe's whole wheat pizza dough! It makes life so much easier, and it is so good! Plus, you cannot beat the price. 99 cents works for me!
