The Menu:

Appetizers:

Hummus and Crackers

Goat Cheese and Beet Mixed Green Salads

Entrees:

Balsamic Chicken with Mushrooms and Tomatoes

(based on this recipe, except I used mushrooms instead of spinach (wanted to do them separately) and nixed the couscous. To simplify the recipe, I cooked the chicken first in a large, deep pan with the olive oil and garlic and then threw all the rest of the ingredients in with it for a few extra minutes!)

Sautéed Spinach with Garlic

(Just TONS of fresh spinach sautéed in a pan with olive oil and lots of garlic)

Chocolate Wafer Cookies

(This was supposed to be baked pears but we were too full!)

Sarah’s Patio Red (from Chrysalis, my fave Virginia winery!)

Yay! We had fun getting everything ready 🙂 It’s way more fun cooking when I have such hot assistants 😉

We had such a fun day! We had brunch in Georgetown at one of my favorite places in the city, Peacock Cafe, and then spent the rest of the afternoon walking around and doing a little shopping 😉

Now it’s time to relax! We have a big day planned tomorrow involving running, more brunch, and some art museum action. And then a hot Valentine’s Day dinner, obviously 😉

    Yes!!!! I already knew she liked sauteed spinach and sweet potatoes, but the beets were a new thing for her and she actually liked them! The only no go was the mushrooms ;) xoxo -A
