Last night, I turned on the oven.

Gooooood morning!

Matt arrived back into town last night after a weekend with the guys in NYC, so I decided I would dust off the oven and actually cook a real meal to welcome him home. Shocking, I know. Behold:

I seriously hadn’t turned on my oven in way too long. Summer heat = all I want are nice, cool salads and vegetarian fare (especially variations of my quinoa and bean salad — I’ve been obsessed lately).

Matt loves pork tenderloin, so I decided to whip up a Roasted Marinated Pork Tenderloin — remember that recipe I just posted on Friday? It was so good when we made it in our kid’s cooking class — I knew he’d love it.

Mmmm… just as easy to make as I remembered it being, and just as delicious, too.

On the side, we had roasted asparagus and some roasted potatoes — both regular and sweet. YUM!

Time to get back to the grind — man, this weekend wore me out! Hanging out at the beach in the rain is apparently really hard work 😉

p.s. Who else is excited for Harry Potter and the Deathly Hallows: Part 2 to come out this week?! I was watching some of the old movies on TV this weekend and I can’t get over how young they look in the early movies. Last night, we watched my favorite — Harry Potter and the Goblet of Fire. I always forget that Edward (aka Robert Pattinson) is in that one!

    Sorry... I'm definitely not a "movie" person :-( (however, I wish I was, since my husband hearts movies!) He knows if he sat me in the middle of a dark theater, it's as effective as taking 2 Ambiens! ;-) Glad Matt's back home... He's a lucky guy to come home from "boys weekend" to have a home cooked dinner waiting for him.... He's got the best deal in town! :-)

    I don't think I've used my oven in months either. It just feel so wrong when the weather is this perfect. But I admit, that dinner does look fantastic. Go Matt!

    I'm like Jill. I am definitively not a movie fan either. Especially Harry Potter. That movie really comes home to roost, it reminds me of how young you girls are. I used to take my youngest daughter to see those movies and I would sit next to her and my eyes would roll back in my head. Sometimes you will do anything for love. Sorry. That meal looks so delicious. Those potatoes loo good. Have a good day.

    I'm a way bigger fan of the books - but the movies aren't too bad. I'll probably wait until it comes out on BluRay to see it though :).

    I am so excited about the movie! I'm actually heading up to NC on Thursday afternoon to go to the midnight showing with my two cousins (14 & 15), one of their friends plus my aunt and uncle. I'm listening (or trying to...itunes is being a booger) to the books on audiobook right now (best way to experience them) and trying to finish before Thursday night. I'm in the middle of Order of the Phoenix right now. We'll see. :D

    Brave lady turning on the oven! I've used it plenty this summer, but with the temps above 90 and feeling like 100 for awhile, I had to resort to baking ziti in the crockpot tonight. I love pork tenderloin, so I can't wait to try this recipe!

    Sooo excited for Harrt Potter! I've been trying to utilize the grill and crockpot more in this heat. I'd be fine with salads for the most part, but my husband likes hot food!
