Mother’s Day Brunch Recipe Ideas + Food/Fitness Randomness

Hello friends! Any fun plans for Mother’s Day weekend? My brother is flying into town from Seattle and we’re looking forward to some nice meals out to celebrate my mom! If you’re cooking in, here are a couple brunch recipes to consider trying. 🙂

Sweet Potato Hash with Poached Eggs

As for what we’ve been eating this week, it was a busy one in the evenings so Matt and I did our own thing a couple nights (translation: grab random things in the fridge; combine them and hope for the best). I did make a Blue Apron on Wednesday night, though!

All the non-vegetarian recipes for Blue Apron this week happened to be gluten free (or really easily modified), so I decided it would be fun to mix it up from Sun Basket! (We switched from Blue Apron to Sun Basket last fall because Matt is gluten free for medical reasons for the meantime, but every once in awhile there’s a week where Blue Apron is all gluten free by chance so I’ll switch back for variety.) I miss the step-by-step pictures on the Blue Apron recipe cards! It’s also a lot cheaper, which is nice. 🙂

Btw – a bunch of you have been asking for a post on Sun Basket vs. Blue Apron vs. some of the other services, and I have one coming up next month! It will be sponsored by Blue Apron (they actually pitched the post idea to me, right when I was already thinking of writing it anyway), but they promised they will not edit or try to influence what I write. I told them I was going to be candid and that for some people I’d recommend Sun Basket over them, and they were fine with that. So stay tuned!

Anyway! I whipped up the Tandoori-Style Chicken and Rice with Summer Squash and Raita. It was soooo good – we both really loved the cucumber yogurt sauce that went with it – perfect with the spiced chicken!

As for workouts, I did another boot camp in the city yesterday morning – this time at Definitions in Georgetown via ClassPass (<- affiliate link for $30 off) as usual. The girls couldn’t make it, so I decided to be a big girl and go on my own, especially since I wanted to work from the city yesterday. It was a good class, as always, although I did miss the social time with my buddies!

Today I’m enjoying a rest day to finish out the week. 🙂

I will end this post with one more piece of very important breaking news: I fiiiiinally got a haircut yesterday! It was so long overdue – my hair was crazy long and getting really heavy and annoying during workouts in particular. It was time! I’m now planning to not wash it again for at least a few days… gotta ride out that blow dry as long as possible! 😉 Yay for dry shampoo!

    My brother is flying in tonight too (from Chicago), I can't wait! Having family live so far away is tough, though at least it's a good excuse to visit other places. Have a great time with your family!

    the hair looks fab, Anne! i just got a cut/colored today, too...for the first time in 6 (!) months. mine is long and thick and wavy and i can totally understand the knotty, heavy pony when working out. that's almost always what leads me to the salon, when it just gets intolerable. have a great weekend!

      Same! It's like I don't even notice how long it has been, and then all of a sudden I HAVE TO GET A HAIRCUT IMMEDIATELY. :) I need to get mine highlighted, too... also been forever!

    Totally random but what kind of dry shampoo do you use? I have not been impressed with the one's I've tried plus I would like a safer option.
