Hi guys! As we approach fall, I know many of you will be headed back into offices or classrooms and in need of some new packed lunch ideas. I love watermelon, so I thought a round up featuring some watermelon-infused recipes that can be taken on the go would be fun and a bit different than the usual lunch fare. Here are 10 packed lunch ideas featuring watermelon, from my blog and around the web. Enjoy!

Chicken Gyros with Watermelon Rind Tzatziki – pack the bread separately and assemble right before eating to keep from getting soggy!

Watermelon Buddha Bowl – the varieties of this recipe are endless – amp up the protein by adding beans, chicken, or fish! Great way to use up leftover protein from dinner.

Beluga Watermelon and Lentil Caprese Salad – this pretty and protein-packed lentil salad would be really easily portable!

Watermelon and Feta Mason Jar Salad – is it just me or is everything served in a mason jar automatically more fun?! Just add some grains (quinoa would be great here, or have some bread on the side) and protein (beans or leftover protein from dinner) to make this a full meal!

Grilled Cheese Arugula Panini – YUM. I would never have thought to add watermelon to a sandwich! (I’m also eyeing these Gluten Free Mozzarella Sandwiches…)

Roasted Salmon with Watermelon Salsa – I know this is more of a dinner recipe – but if you make extra the leftovers travel really well and make a fabulous packed lunch!

Tabouleh Stacks with Chicken and Watermelon – so creative, and I love all the different textures!

Watermelon Feta & Mint “Pizza” – this isn’t a full lunch, but it would make a really cute side dish! I bet kids would love this one too.

Watermelon and Bulgur Wheat Salad – add some beans to amp up the protein, or enjoy this as a hearty side!

One last one for my readers with kids – how cute is this watermelon-themed lunchbox?! I especially love the cheese and watermelon skewers. Leftover chicken or veggies would be yummy threaded on there too!

    Wow, these are all gorgeous!! I'm not a huge watermelon fan by itself, but all of these sound amazing!
