Perfecting the Art of Baked Chicken Fingers

Good morning!

I just have to say how excited I am that Matt and I have perfected the art of baked chicken fingers.

And also that whenever we make them there are plenty leftover. I enjoyed some for lunch yesterday, along with some other leftovers — roasted potatoes and Brussels sprouts.

I think if I had to choose one meal to eat for the rest of my life, it would be chicken fingers with ketchup. (Because I can’t eat them without ketchup, obviously.) Either that… or maybe pita and hummus. 🙂

In other delicious news, I’m loving the new Chobani Greek yogurt flavors they sent me to try! I had the Blood Orange flavor the other day and it was awesome, and the Apple Pie is delish as well. Matt LOVED this flavor.

I spent pretty much all day yesterday (when I wasn’t at school) buckling down and getting some serious work done. I spent all day/night finishing two big assignments and then face planted into bed at 9:30. I’m so cool.

But guess what? Tonight marks THE RETURN OF WALLEYBALL!!!! Remember that from last year? It’s basically the best intramural sport ever (and we are terrible at it). I’ll be back tomorrow with a recap, obviously, but in the meantime, hear are some hilarious posts about last year’s Walleyball experience:

    I love chicken fingers with ketchup, and love making them at home to keep them healthy. We made baked chicken fingers, mozzarella sticks and onion rings for the super bowl using Panko bread crumbs and grated parm. So good!

    That apple cinnamon is the only new Chobani I haven't had yet-- for some reason I'm less drawn to it than the purely fruity flavors. But your endorsement makes me think I should branch out!

    I love baking healthy chicken fingers, such a comfort food for me! This sounds lame but mine would be peanut butter and anything really. I cannot go one day without it!

    Yes ma'am you surely have perfected chicken fingers. I thought mine were the best until I tried your recipe and now I am asked by my family to fix your recipe every time they are on my menu. Instead of ketchup, I like to mix honey and mustard to dip them in. My favorite is my homemade Italian spaghetti sauce. Being half Italian myself, I saved all my mama's recipes. I had rather have spaghetti than a steak.

    I don't eat meat but I'm definitely of the mind that anything dipped in ketchup is delicious! And I agree, the new Chobani flavors are amazing :)

    Looks great. Chobani greek yogert is great, but the apple cinnamon is way to weak on cinnamon flavor and we have to ad extra cinn so just do it with the blue lable chobani instead much better. :)

    This is probably one of my favorite meals! I love chicken and roasted veggies. Especially potato's and brussels sprouts. :) Looks yummy! Annie's has some tangy/spicy bbq sauce that I love to dip my chicken in.

    Those look so good! I could live on a large, semi thin crust pizza with extra sauce and extra cheese. I could eat pizza all day, every day. :-)
