Potluckin’

Morning, friends! I loved all your stories about getting caught in the rain in the comments of my last post! There were some pretty funny ones. 🙂

Who else is pumped that it’s FRIDAY?!!? Hooray for sleeping in tomorrow! Last night, I met up with my friend Sokphal for an evening run after work — 4.15 miles, check — they were hilly and hard but it felt good to get out there in the fresh air!

I busted out my MOTOACTV watch again and I’m still really liking it. Very user friendly! I set up some auto-settings — auto lap to track my splits (although I wish it beeped every mile and popped up with my pace like the Garmin does), auto start so that when I start running the workout automatically gets started, auto stop so that if I stop at a light, it stops too, etc. Pretty sweet! No music since I was chatting away, of course.

After the run, I showered and rushed back out to head over to my friend Beth’s place for a potluck with some of my girlfriends!

Yay! It was fun to catch up with everyone. Disregard the awkward underneath self timer photo. 😉

Beth decided on a BBQ theme and made ribs for us all:

Plus mashed potatoes, which I apparently forgot to photograph. Others brought corn bread:

And my contribution was salad!

I brought a big mixed greens salad topped with sliced almonds, beets, and goat cheese. Simple and delicious! Dressed with a homemade balsamic vinaigrette I made by mixing equal parts olive oil and balsamic vinegar, plus a couple squirts of Dijon mustard.

Yum! I also went back for some mashed potatoes after I took this picture. 🙂

I was too distracted by conversation to take pictures of dessert, but we had Haagen Dazs ice cream. Mint chip for me — SO good. Thanks for hosting us, Beth! We need to do that more often. 🙂

Off to the hospital to finish out the end of my second week at my dietetic internship!

    When you use beets in salads do you use sliced, canned ones or do you roast your own? I tried that once and it was just so messy.

      I'm lazy and use canned. One of the very few canned veggies I actually think tastes good! :)
