Quick and Easy Quinoa & Bean Stuffed Red Peppers

Dwindling resources in the pantry and fridge forced me to come up with something creative for lunch today!



Quinoa & Bean Stuffed Peppers

(makes one serving)


  • 1 pepper with the top cut off & seeds cleaned out
  • 1/2 C cooked quinoa
  • 1/2 C kidney beans, drained & rinsed
  • A couple shakes each of: cinnamon, tumeric, curry powder, chili powder, and cracked pepper
  • Feta cheese


Mix together the quinoa, beans, and spices. Place into the pepper, top with a sprinkling of feta cheese, and enjoy!


If you want to heat the pepper + contents, I’m sure that would be delicious too. I was just too lazy ;)

I enjoyed it with a green smoothie :)


Time to get back to studying! Another Anatomy & Physiology quiz this afternoon.. bah.

Do you guys remember Jessica, one of my BFFs that I visited in Washington State back in January?


She has taken on an incredible challenge — on September 24th, she will be participating in the Susan G. Komen 3-Day for the Cure in Seattle. This will involve walking 60 miles over the course of three days and camping out at night. Wow!


Jessica has pledged to raise $2,300 for the cause — proceeds go towards breast cancer research and community programs. Her mom was recently diagnosed with breast cancer so this cause is obviously very important to her! Jess is one of the sweetest, most thoughtful people I know and she said she feels this is the least she can do for all the wonderful, inspiring women she’s met at the hospitals.     that’s so great she’s doing the 3-day for the cure! and your pepper sounds great…although I would definitely heat mine up…mmmmmmm, melty feta!

    I haven’t done the 3-Day but I did do the DC Avon 2-Day walk last year! I trained for about 4 months and slowly increased my mileage. I think that reason, along with plenty of cross training (elliptical, YOGA, pilates) and good shoes helped me avoid injury. Good quality running socks kept my feet comfy and she should train (and walk) in running shoes over walking if she has the option. I’m happy to share more of my experiences offline too!

    I love stuffed peppers. Last time I made one I put smoked salmon, white beans, and corn inside of it. Delicious!

    YES – feta cheese, such a good idea. I had stuffed peppers on my meal plan for tonight and now I’m totally going to pick up some feta on the way home from the library.

    Thank you so much for the support Anne, you are so freaking amazing! And thank you to all of your awesome readers for their words of encouragement, this will be fun but tons of training. Thanks for keeping me company over the phone on my walks so far and you know there are more to come! 60 miles, here we go! I think Im more worried about the camping in Seattle part…yay rain!

    I’m sorry to hear about Jessica’s Mom, we are all cheering for her! I donated! The 3 Day is intense, I have only done 1 day breast cancer events so far but I hope to do the 3 Day soon. Best of luck Jessica! :) Cya in August!
