I love the mix of flavors and all the veggies in this egg casserole! It’s easy enough to throw together for a breakfast that you can eat all week, but impressive enough to serve guests at a brunch party. My kind of recipe!

Smoked Salmon & Vegetable Egg Casserole

(makes 4 to 6 servings)

  • 6 eggs
  • 1/2 C milk
  • 1 C zucchini, chopped
  • 1 C mushrooms, chopped
  • 1 C green pepper, chopped
  • 1/2 C spinach, chopped
  • 1/4 C feta cheese, crumbled
  • 1/4 C smoked salmon, chopped (optional but tasty – bacon would also work)
  • Salt & pepper to taste
  • Fresh basil to top casserole (optional)

Preheat oven to 350.

Crack eggs into a large bowl, whisk, then toss in the rest of the ingredients (including some salt and pepper to taste). Mix and then pour into a baking pan! The one I used is 11 x 7 and about an inch deep.  Bake 25 minutes or until cooked through with a golden brown crust. Top with fresh basil, if desired. Enjoy!

you don’t precook the veggies here and the get soft enough? just curious. Sounds much easier this way :)

Do you think this could be frozen Anne? Unfortunately I think I’m the only one who will eat this in my household! :)

Hmmmm. I’m not sure – I’ve never tried it! You could always just cut the recipe in half :) If you try freezing it, let me know how it goes!

This sounds super easy and yummy. Will definitely try it with the bacon.
