Really Easy Perfect Salmon Recipe + House Sold + 18 Months!

Hi friends! 

First things first: a hot tip that my Mediterranean Bulgur Salad with Lemon Mint Vinaigrette is really good with salmon!

Also worth mentioning is my new favorite way to prepare salmon, because it’s so easy! 

I may actually do a full recipe post for this because I feel like it’s hard to know how to prepare salmon well at home so it doesn’t end up dry/tough (or maybe that’s just me).

Thoughts? Would it be helpful to have this “recipe” put into a more official blog post so you can easily access/find it later? Let me know. 

So here’s the deal: in a deep oven-friendly baking dish, place a hefty drizzle of olive oil (probably about 1 tablespoon) + the juice from 1 to 2 lemons (about 3 to 4 tablespoons). Swirl it together a bit, then place your salmon into the dish, skin side up (like on the right below).

After about 10 minutes, flip the salmon so that the skin side is DOWN, then place the dish into the oven, uncovered, for 12 minutes at 400 degrees F. 

Et voila – perfect, super tender and moist salmon.

I love that salmon prepared that way can easily be incorporated into any other dish since it’s not heavily flavored! It would be really good with my quinoa salad with orange vinaigrette, in fact… 

In other news, we sold our house!! We ended up getting 3 offers, which was exciting (and a big relief – so nerve wracking). 

All our hard work (and money – hi landscapers, painters, front porch stainers, power washers, etc.) decluttering and staging the house paid off!

We celebrated earlier this week by breaking into some of my parent’s bubbly (we are still camped out at their house – hoping to move back to our place today or later this weekend once the staging furniture is removed because white couches and toddlers/dogs/cats do not mix). 😉 

We are moving back into our place for a couple months while we wait to close on both our current house and then on our future house, so we won’t do our big move until later in the summer. 

(For those just tuning in, we are moving to Del Ray area of Alexandria – about 20 minutes away so nothing crazy but will be fun to mix it up. I talk more about the move in a few of my recent posts if you want to go back and read them!)

Anyway! 

Can you believe this little one is officially 18 months today?! Ahhh!

It is SO fun that she can walk/run now – our favorite thing is to go out on the trails together and wander around. I love that she loves being outside as much as I do – although it can be hard to get her to come inside (hi, tantrums)!

Even with the occasional tantrums I am loving this stage, though – it’s incredibly cool to see her get more engaged (and more chatty/vocal) by the day.

I’ll do a bigger Riese update sometime soon if you all are interested – let me know what you’d like to know about! 🙂

Matt and I are looking forward to a long Memorial Day holiday weekend, and I hope those of you in the U.S. are, too! I’m not sure if I’ll be posting on Monday or not yet – stay tuned. 🙂 We will see how busy we are!

    Hooray for selling your house! What a relief!! Phew! I figured it would sell fast given the market conditions right now. It will be nice to have some time to plan/prepare for your move! I can't believe Riese is 18 months. I can't believe our little guy is 15 months! The days are long but the years are short... I love the stage our little guy is in as well. It has it's challenges but overall it's fun to see their little personalities come through more and more each day!! Thanks for the salmon instructions. I tend to eat salads for lunches during the summer so I need to make some salmon one of these weekends!

    I love fish, especially salmon, but cooking it used to be a chore and my results were inconsistent so I didn't do it very often. Last month I got an air fryer, and it is a world of difference for fish. Even if I let it cook at little too long, it just makes the surface crispy but the inside is still tender. So for anyone who has an air fryer or anyone who wants an air fryer, I'd definitely recommend it for fish. Congrats on selling the house!!!

    Hi Anne - we are doing some projects around the house with hopes of putting it on the market soon. It's so exciting to hear that you were able to sell your home so quickly! Our youngest turns 2 next month and getting her back inside after playing is so hard. Have a great Memorial Day weekend!

    Just curious why you moved out and (presumably) brought staging furniture in? Then you move all your furniture back in? The nuances of real estate are a mystery to me.

      They actually staged it with almost entirely our stuff - they just had us clear out lots of clutter, personal photos, etc., and then they came in and brought some new lamps, decorative rugs, pillows, knick knacks, etc. to make it look extra nice. The only furniture they staged with that wasn't ours was they moved our huge couch + coffee table into the realtor's garage while the house was being shown and brought in a much smaller (and nicer) couch and coffee table - made the tiny living room look a LOT bigger! As for us moving out, we needed to be out of the way while the house was being shown, and we knew there would be appointments all day long for about 5 days (plus an open house) and so it was much easier for all of us for us to be not staying there while that was happening. :)

    I would love to read an 18 month update post! Especially about if you've weaned and if so how that process went. I'm still nursing my 14 month old but am starting to think about weaning and have no idea where to start...I have a little boob addict on my hands!

    Great recipe, and I even used only a teaspoon plus of oil, and it was great. I much prefer to bake things then sear etc. So much easier. I used a "Skinny Taste"recipe for rosemary salmon for the sauce added and I topped these with her sauce which is lemon, rosemary ( I added chives too) and white wine and a bit of honey and a touch of cornstarch. Was perfect with this. Thank you.

    A recipe haven't done in awhile but remembered how nice it turns out. I did a black lentil pilaf with it, so the more simple preparation is perfect for that. Thanks!
