Salmon for Days

Hi guys – before I get into today’s blog post about our eats + fitness from the past week, I want to share a few links. First, this one on 5 ways that non-black people can take action right now. And now, on to the eats. Since I didn’t do a lifestyle post on Friday (because I wanted to share my favorite natural personal care products for babies/toddlers post), this post will include eats from the past week, not just the weekend. 

First up: alllll the salmon.

That was a variation on my salmon with lemon mustard dill sauce (minus the dill in the sauce). Always a big fave over here! 

We made a ton of salmon earlier in the week to eat on the leftovers for easy meals later. My favorite meal prep salmon recipe is my Easiest Baked Salmon Recipe. 

I had some of the leftover salmon for lunch one day in the form of a quinoa salad with feta, greens, avocado, and a homemade balsamic vinaigrette, plus a side of chalk art.

And another day we all had salmon tacos! I reheated the salmon briefly in the microwave, then flaked it into small pieces and added it into soft tortillas along with black beans, guacamole, broccoli slaw (love that crunch), arugula, and hot sauce. 

I made Riese a mini one with just salmon, black beans, and guac and she liked it too! She’s obsessed with tortillas.

Another thing we noshed on a lot this week was my veggie egg casserole (with bacon instead of smoked salmon).

It’s especially awesome reheated with some grated sharp cheddar on top, just sayin.

It’s also extra tasty with a side of blueberry pancakes shaped like monkeys. 😉

Another yummy meal from the past week was my Grilled Steak and Strawberry Quinoa Salad. That’s one of our all-time faves and so perfect for summer grilling season!

We used regular balsamic vinaigrette instead of the strawberry vinaigrette because we didn’t have enough strawberries and wanted to save them for the salad, and it was still really good.

We also had a tofu stir fry one night (see my Easy Stir Fry Recipes post for ideas)…

And we ate a lot of lunch sandwiches! (For ideas, see this post: mix + match Healthy Sandwich Recipes.)

As for fitness the past week, Riese and I did a couple hikes:

I had two virtual phone run dates with friends:

And Matt and I did our usual 3x/week virtual boot camp class led by Matt’s brother Drew, a fitness instructor in NYC. 

I will leave you with a photo of our new favorite evening activity: Gin Rummy. I used to play with my grandmother when I was a little girl… it has been fun to learn it again!

I’ll see you guys back here on Wednesday, which is actually Global Running Day by the way – I signed up for the free Brooks virtual 5k just for fun if any of you are interested, too!

I’ve been run/walking all my virtual run dates lately, and while obviously there’s nothing wrong with walking, it will be nice to have the motivation/challenge to encourage myself to actually run a whole 5k straight without stopping because it has been awhile. 🙂

    Thanks for the links. While I know that many bloggers try to keep political commentary out of their posts - and readers appreciate going to a place that is a restful break from current events - this should be a time of self-examination where we all speak up and try to work together to do/be better. So thank you for sharing helpful information.

    Every email I receive this morning from clients, vendors and now a blogger, (who I enjoy very much) has some statement about race. It is all too much. Just like with Corona hit, every email had language about the virus. Its just too much.

    Thanks for providing resources on race! While food blogs are often a refuge from current events, it's too important right now to not say something. We can't keep turning away just because we're comfortable. Also, the salmon looks amazing, and now I'm craving some. Luckily I have some in the freezer. Have a nice week!

    We have been enjoying baked salmon too! We had it with a rice blend and a vegetable side the first night, a salmon/veg/rice bowl another night, & now I made a frittata this evening. We made a sauce using Greek yogurt, lemon, dill, mashed capers, & Cholula garlic oil hot sauce. It was really good!
