Snowed In

Hi friends! It’s snowy and icy over here – more slushy/icy/wet than fun fluffy snow, unfortunately, but Matt, Riese and I did get out to explore a bit yesterday when the snow was nicer!

Before the snow set in, on Saturday, it was cold but nice and sunny and I got out for a walk along Hains Point in DC.

I always love it there – never crowded and the views of the water are so lovely.

It had been weeks since I saw a friend in person and a (masked) walk date in the sunshine along the water with my friend Kathleen really lifted my spirits. I’m glad we made it out before the winter weather hit!

Other excitement from the weekend included testing out a new recipe that will be coming soon to the blog!

I’m a big stuffed peppers fan, and I already have an Easy Stuffed Peppers blog post that features a bunch of flavor variations you can make in the oven, but this time the post will be an Instant Pot version!

Matt helped me test it out. 🙂

They came out delicious and made a yummy and filling lunch.

The main recipe will be Mexican-themed, but we were testing the bonus Italian variation. Stay tuned – the IP Stuffed Peppers recipe post will be coming to the blog next Wednesday!

Other eats from the weekend included pancakes on Saturday morning per tradition:

Riese had fun shaped ones of course. We made them with bananas this time instead of frozen wild blueberries, so they were golden not purple!

As for dinners, we got delivery one night from Liberty Tavern in Arlington (burger + fries + kale salad for me), and the other two nights we had Blue Apron (<- affiliate link) meals for dinner as usual.

On Friday we made a yummy Italian-themed cheesy chicken with orzo and kale that reminded me a bit of my Saucy Quick Chicken Recipe with Artichokes and Tomatoes (<- one of our fave super fast and easy dinner go-tos that takes only 15 minutes and 4 ingredients to make with zero prep/chopping) in terms of flavor. 

I love orzo and next time we make that saucy chicken I’m going to serve it over orzo, yum!

By the way, if you want to see my all-time blog favorites, here’s a post from a couple years ago featuring the 9 blog recipes that we make over and over again! I’ll have to do an updated one with some newer recipe faves, but those are definitely still accurate in the meantime!

Last night we had a sheet pan pork with roasted potatoes and roasted brussels sprouts. Also yummy! If you want some sheet pan ideas, check out this post: Mix + Match Sheet Pan Dinners.

And speaking of sheet pan recipes, I have a garlicky chicken sheet pan recipe coming to the blog on Wednesday, so stay tuned for that!

This cold weather has me craving soup now… I haven’t made my Instant Pot Chicken Tortilla Soup Recipe in too long, might be time to give that one another shot!

    There is nothing like snow (as long as it melts pretty quickly!). And I love stuffed peppers, so bring on the recipe for them, please! Enjoy the winter wonderland while it lasts (and hoping that it doesn't turn to ice!).

    Can't help but notice how lean Matt looks. Wasn't he gluten sensitive at one point? Maybe his new diet (way of eating) has contributed to that. I would love to look lean, but unfortunately, I've gained, partially due to this one plan I was following that contained a lot of beans. For me, maybe chicken would be a better replacement for beans. What do you think?

      He was following a gluten free diet back in... 2017 and 18 I think? Just for a little while due to Lyme disease - his doctor recommended it in tandem with some supplements and other things we were trying, but it was just a temporary thing. Re: chicken or beans, I would just ask what you like to eat more - which tastes better to you? Beyond that I'm not able to give any individual nutrition-related advice unless you are one of my one-on-one clients with in our nutrition counseling relationship. And at this time I'm not taking any new clients. I'm sorry I can't help!
