The Leftover Special

I heart leftovers. Especially leftovers involving turkey 🙂

On Christmas Eve, my family had our Christmas dinner here at home (before going to our friend’s house for dinner on Christmas day), and we had all the standard tastiness: turkey, gravy, string beans, mashed potatoes, my spiced mashed sweet potatoes, etc.

Today I made one of my favorites for lunch — a leftover turkey, cranberry, and avocado sandwich. DELISH!

002Served toasted (because bread is ALWAYS better toasted) and topped with a massive pile of spinach.

On the side, I enjoyed some leftover Spiced Mashed Sweet Potatoes (have you tried this recipe yet?? It received rave reviews from the fam!) and some string beans. I LOVE string beans. Mmmmm

We have a plethora of amazing pears at the moment too, so my dessert was a sliced pear with a few spoonfuls of plain greek yogurt on top. YUM.

I think pear is my favorite fruit to have with plain greek yogurt. They compliment each other very nicely. Give it a try 🙂

It’s a beautiful day in Tampa today — perfect for my last day here! So far I’ve spent it running and taking walks. I also convinced my mom to take me to the health food store here in town 😉

My mom, dad, brother, and I are going out to dinner tonight and then I’m off in the morning to the west coast! Woo!

    I DID try the mashed sweet potatoes recipe btw! I realized i DO have cumin in my spice rack- but i think i microwaved them too long because they were really dry- but the flavor was nice! I actually added in a pinch of salt along with the cumin and cinnamon, which was yummy. hehe.
    Oh boo! Try boiling them instead? That's what I do and they are deliciously moist :) -A

    Leftovers are the best. For Thanksgiving I made a leftover turkey omelet. Mmmm. Avocado and cranberry sauce sound like an awesome pair--don't know why I never thought about that! I might have to try cranberry avocado pudding now

    Hey Anne! My name is Lauren and I have finally stumbled into your blog after hearing so much about you! :) I just want to tell you how much I admire you and love your vibe. You have such beautiful insight and wonderful inspiration and I am enjoying reading more about you. I also noticed that you live in DC which isn't terribly far from me (I live in PA), but I wanted to see if you happened to know anything about the National Cherry Blossom Race in April. I am running in it as the company I work for is sponsoring me for this spot. Anyways, I am planning on spending the weekend in DC from April 9-11 and wanted to know if you had any great suggestions for awesome restaurants or things to do. It's actually my B-day on April 10th, so we are looking for a really outstanding place to celebrate. And even if you would be around and interested in a meet up (I know it's not until APril) that would be fantastic to think about! :) Okay, sorry for rambling.     My Dad's specialty is smoking turkeys, he does about 25-30 each year. It is so delicious; so simple turkey sandwiches are a big part of my life for the weeks after the holidays! Tomorrow I've got a smoked turkey wrap with spinach, red pepper and cucs, a little mustard and laughing cow might also make an appearance... can't wait for lunch. Other than that, making turkey soup with the bones was always my other favorite thing to do!

    I love leftover turkey in sandwiches and pasta dishes. Also, Rachel Ray has a great recipe for turkey Shepherd's Pie with sweet potatoes on top that tastes phenomenal! Just started reading your blog today, and love it so far! :)

    that leftover turkey sandwich looks incredible!! i am really loving pear lately. maybe because they're in season and they are always so juicy and ripe! loving your blog, just stumbled upon it actually. have fun in california!
