The week I ate (almost) entirely Mexican food

It’s true, friends – I hereby name this week the week where I basically only ate Mexican food. Behold, for your viewing pleasure: the epic taco feast that kicked off my Mexican food extravaganza:

Impressive, right? Matt makes a mean taco, I tell you. Or in this case, 4 tacos. So good. 

Ground turkey (cooked in Mexican seasoning) + grated cheddar + tomato + guac + cilantro + red pepper + chopped lettuce to the face. 

The leftovers turned into a taco salad the next day for lunch plus some brown rice (buried under the rest), black beans, and broccoli slaw for extra crunch. The “dressing” was some Mexican hot sauce.

We still had a little bit leftover, so the next day I ate it in wrap form with some extra cheese added. Still delicious, don’t worry.

The remaining can of black beans found its way into an egg wrap for breakfast with more cheese and some guac and arugula (the tortilla ends are ripped off because Riese is obsessed with tortillas and kept stealing it):

Continuing my black bean kick, I opened another can of black beans and continued the feasting with some leftover sweet potato, microwave-wilted spinach, guac, and leftover chicken for a delicious lunch bowl.

And then the rest of the chicken and black beans went into yet another wrap, this time with broccoli slaw, more guac, more cheese, and more cilantro. I told you I ate ALL the Mexican food this week. I was just really feeling it! And just using up what we already had on hand. 🙂

I did eat a few non-Mexican meals this week, though, don’t worry. 

I enjoyed the leftover vegan strawberry scones I made last weekend with some fried eggs a couple mornings in a row (I ate half of this one while cooking the eggs…):

And another day for lunch I had a sandwich with turkey, mustard, sauerkraut (love this on sandwiches), cheese, and lettuce) with a pickle and a big salad that Matt and I shared.

For dinner one night I also had a super simple toasted ham and cheese sandwich with more sauerkraut and some tomato sauce (super random but it tasted good).

And last night Matt made us a yummy Blue Apron Asian salmon and rice dish with sauteed peppers and string beans. The soy glaze on the salmon was really good!

For fitness this week, I did a run/walk phone date with my friend Karen – we’ve been doing a standing Wednesday morning virtual run phone date and it’s been really nice to catch up with her!

And I got in 2 virtual boot camp classes taught by my brother-in-law Drew. Tough ones this week – my legs are sore!

I also got in a yoga class finally – felt really good to stretch! I have such a hard time focusing/staying engaged with virtual yoga classes on my laptop, but I did it and was proud of myself because my body really needed it.

I did a 45 minute YouTube slower power flow taught by fellow blogger Jen one day while Riese was napping. It was a good one! And fun to virtually take a class from her since I’ve read her blog for a long time. 🙂

I hope you guys have had an okay week and that you spent some time out in nature, if you were able to, to celebrate Earth Day on Wednesday. Riese and I celebrated by throwing rocks into a stream – her fave. 🙂

Also, for those who have asked, and since I’m thinking of it because of Earth Day, here’s a picture update of our compost bin! It’s looking pretty good – no signs of vermin, just some fruit flies when you open it up. It hasn’t really broken down all that much yet (that black stuff is soil from an old potted plant), but it should start to as it gets hotter out!

I will leave you with a picture of our evening entertainment from the week: Scrabble! The first game Matt crushed me, but thankfully I redeemed myself with a big win the following night. 😉

    Excited for the intuitive eating while wfh post. Some weeks seem okay while others I'm eating for all the wrong reasons cause the kitchen is so close!

    I love all of your food!! Thank you for making and sharing amazing meals that are relatable and inspiring. I love simple meals with fun twists as well as throw-together meals on some week nights. I'm all for tackling a more complicated recipe at times, but I also find the most inspiration from meals like you share. I've reintroduced sauerkraut into my diet and love it on salads and sandwiches too!

    Hi! This is quite specific but maybe a post about different sandwich combinations? I don't eat meat and my lactose intolerance is acting up a lot and so now trying not to eat cheese- I'm craving comfort food like sandwiches and don't know what my choices are!!

    My lunches are almost entirely tacos. Now that I'm home it's just so easy to pull random leftovers out of the fridge and put them in a tortilla. I always keep a can of refried beans in the fridge and bell pepper mix in the freezer, just add leftover meat if we have it and hot sauce, roll it up and put in the air fryer for a minute and voila! lunch is served.

      Totally agree - it's so easy and I find I enjoy tortilla wrap type lunches more than sandwiches for some reason - maybe the texture?

    A suggestion would be foods/ways of dealungwith bloating and just feeling grossing general. Not pregnant but just not taking amazing care of ourselves.

    Hi Anne, Add Earthworms they speed up the composting process and enhance the finished product. Use red worms A.K.A. "red wigglers or manure worms". I'm speaking from experience so find some worms! LOL

    If you have any favorite brands for guac, dressing, sauces, meats, etc., I'd love to know about them! :) I'm definitely up for trying new things during this time of increased cooking and baking, haha.

    Looks really delicious! Those tacos in particular! If you want yet another tortilla and black bean idea - check out blue apron’s smoked Gouda and black bean flautas recipe (I actually think it’s in the rotation from them again in a few weeks). I think I’ve made a variation of it three or four times during quarantine now - swapping out types of cheese and sauce and adding leftover veggies, and it works each time. Also love the scrabble night! I feel like I need to brush up on the two letter X and Q and Z words that my husband seems to know so many of ?

    Nutrition question that can maybe help with a post: (this is in line with your cans of black beans) - Do beans/lentils/legumes count as a "serving" of vegetables? I'm using this time at home to work through my pantry stash of dried beans, and I'm always trying to eat more veggies, and I'm not sure if a scoop of beans counts.

      I would actually count beans as protein! :) Plus an extra fiber boost. Definitely a nutritious addition to a meal even though I wouldn't consider them veggies!
