If you’ve been craving a cozy bowl of soup, these filling vegetarian soup recipes will hit the spot. They’re all healthy and comforting – not to mention easy to make.

There are a lot of different flavors to pick from in this list, from curries to Italian-inspired soups. So there should be something for you no matter what you’re in the mood for!

Tasty Meatless Soup Recipes

I love a veggie-packed, flavorful soup, and these are some of my favorites!

Some have pasta, some feature beans, but either way, they’re all super nourishing. They make fabulous meals, especially on colder nights when you need something to warm you up!

And now, on to the list:

Vegetarian Tortellini Soup (Instant Pot + Stovetop)

Pillowy tortellini pasta filled with cheese, soft white beans, and sautéed veggies make up this delicious soup!

You can make it super quickly in the Instant Pot, or you can easily make it on the stove too. Top with parmesan cheese for even more flavor.

Instant Pot Vegetable Soup

This is the perfect clean-out-your-vegetable-drawer soup!

You basically mix tons of veggies with chickpeas, broth, and seasoning for a super quick, ultra tasty and vegan meal.

Vegan Black Bean Chili with Raspberries

This black bean chili is a little different, but in the best way! Raspberries give it a hint of sweetness, and chipotle seasoning gives it a little kick.

It’s sweet and spicy, plus it happens to be vegan and gluten free – so everyone can enjoy it! If you aren’t vegan, add a dollop of sour cream or plain Greek yogurt for a creamy, tangy mix-in.

Curried Carrot Ginger Soup

The combination of curry powder and ginger simultaneously warms and spices up this carrot soup, which makes a great appetizer or starter.

Coconut milk makes it creamy (while keeping it dairy free), and it’s especially good with a hunk of crusty bread.

Vegan Minestrone Soup

This veggie-packed minestrone soup is an old favorite of mine! It’s super flavorful, nutrient-rich, and easy to make.

You can easily swap in your favorite vegetables, or whatever you have on hand. Plus, it happens to be vegan!

Vegan Tofu Curry with Watermelon Rind

This is a fun twist on curry, using tofu and leftover watermelon rinds (goodbye food waste!).

It’s bright and refreshing, with warm spices and a delicious broth. Serve over brown rice for a nourishing meal.

Instant Pot Butternut Squash Soup

This soup just screams fall. It’s cozy and tasty, with sweetness from the butternut squash, smokiness from the smoked paprika, and a hint of fresh sage.

Plus, pepitas (pumpkin seeds) for a bit of crunch! (Just leave out the bacon to make this a vegetarian soup.)

Watermelon Rind Gazpacho

You’ve probably heard of gazpacho (chilled soup), but have you heard of watermelon gazpacho? It’s so good, with refreshing, juicy watermelon and creamy avocado.

It’s the ultimate summer soup to cool you down!

Sweet Potato Coconut Thai Curry

Rich and comforting sweet potato lentil curry is filling and cozy, with a delicious blend of spices and fresh herbs (like Thai basil).

This is your go-to soup for the fall and winter months to keep you nourished and warm.

Chilled Avocado Gazpacho with Melon

I love the combination of sweet, creamy cantaloupe and savory avocado in this soup! Lemon juice gives it a little zing, too.

It’s really simple – with just six ingredients – and easy to make. Perfectly cool and refreshing for warm days!

    I want to try the chili with raspberries. Dried cherries in black bean chili is also delicious. Putting fruit in chili might seem strange, but it tastes amazing!

    OK, I've been trying to figure this out forever, so perhaps you have some ideas, as an RD! I really, really dislike the taste of coconut milk. Yet, so many curries use it! Do you have any ideas as to what would work as a sub??? I have thought of regular non-dairy milk (I typically use Ripple pea milk, unsweetened, in other things), but wasn't sure if that would work. Any thoughts would be greatly appreciated! Thanks!

      Hmm interesting question! I would try the ripple pea milk - if it's unsweetened/unflavored, that should work fine, it will just be a little less creamy I think because coconut milk is less watery/more creamy. Let me know how it goes! Unsweetened, unflavored almond milk could also work potentially. Again, I think it would just be more watery and less creamy though.
