Hello, hello! How were your weekends? We kicked ours off on Friday night with some lettuce wraps. (psst: I have a whole blog post with mix + match healthy lettuce wrap recipes – check it out for some easy dinner inspiration!)

On Saturday, Matt and I had our usual back-to-back sessions with Paul from Capital Energy Training – this week he and I focused on upper body mobility (neck/shoulders, etc.).

Post-mobility session breakfast was some leftover barley and black beans topped with a fried egg and avocado. Yummy combo!

Matt made himself a more epic variation with leftover roasted potatoes, bacon, peppers, and onions in the mix as well.

For a late lunch on Saturday I made an old fave – my Instant Pot Chicken Tortilla Soup (<– recipe). I love this soup! Super easy to make too. I’m on a roll with the instant pot lately – have you tried my Instant Pot Quinoa “Fried Rice” Recipe from last week yet?

I added in some fresh baby spinach once it was cooked – love that pop of green!


Riese got a deconstructed version of it for her dinner – she liked it, too. 🙂 

We spent most of the day on Saturday working on projects around the house – we’re trying to tidy up and get rid of stuff so our place feels more spacious and less chaotic. So far, so good! We got a pan organizer/stacker, a mountable pot lid rack to put inside one of our cabinets, and a cutting board/pan organizer – Riese was very intrigued by all of the action. 

Success! That’s better.

My parents came over for dinner on Saturday night and after Riese went to bed, we had our usual family fave steak and taco salad. Always hits the spot. 

I was up early on Sunday and couldn’t sleep so I did a little work and had an early pre-breakfast – toast with peanut butter, plain Greek yogurt, and pomegranate arils. 

Second breakfast once Matt and Riese were up was leftover acorn squash, avocado, sauerkraut, and fried eggs. Super random but hit the spot! 


For lunch yesterday, we decided it would be fun to go out! I was in the mood for Lebanese food, and we went to a local spot called Me Jana – love that place. We had hummus and pita and grape leaves to start, and then I had a salmon Greek salad and Matt had a chicken shawarma sandwich. We shared everything – Riese loved the hummus and pita, and the salmon!

As for the rest of yesterday, we spent it doing more reorganizing and decluttering around the house! I also made it out for a yoga class while Riese was napping, which felt nice.

Matt headed out for dinner and some football watching with his buddies after Riese went to bed, so I had leftover Instant Pot Chicken Tortilla Soup for dinner on the couch and then did some work (catching up on emails and writing this post) so I would be able to enjoy today off along with Matt for MLK day.

    I will definitely need to keep those products n mind for whenever we do move because I hope to organize our cabinets a bit better! All of your food looks fabulous, and I love your combinations of textures and flavors. Hope you have a great day!
