West Coast or Bust, Take 2

… Annnnnnnd I’m off once again! Seattle, here I come 🙂

But first, I had a delicious packed lunch at work. This was one of those “use up whatever is left in my fridge” lunches and it came out great!

In a tupperware, I topped a serving of bulgur wheat (cooked in the microwave)…

…with a package of tuna that I mixed with dijon mustard and a laughing cow light swiss cheese wedge (this stuff is SO good in tuna!)…

…and then added on a bunch of veggies — chopped tomato and cucumber:

broccoli slaw for crunch:

… and a big handful of fresh baby spinach:

I drizzled on a little balsamic vinaigrette, and voila! It was DELICIOUS.

To have on the side, I packed my new favorite snack (recipe here!). 🙂

So why am I going to Seattle?

I’m heading out there for Bastyr University’s open house on Saturday (I’m considering their Nutrition Masters Program). It looks like a really cool school so I’m excited to check it out! I’m also excited because one of my best friends, Jessica (remember the super cute and creative way she asked me to be a bridesmaid in her wedding?), lives out there with her fiance, so I’ll be staying with them! They are actually on Whidbey Island, which I hear is amazing. Get ready for some serious outdoorsy adventures and photography! 🙂

I’m off to the airport — have a lovely rest of your day!

    i get so excited when you go on trips because i know there will be some amazing photography to come :) have fun! hope the visit goes well :)

    I've done the tuna/laughing cow combo before-- it's a good one! Have fun in Seattle...my hub is from there, and I love going back to visit his family. SUCH a fun town!

    Have fun! I grew up about 5 miles from Bastyr and actually attended Girl Scout day camp on their campus. I have heard nothing but good things about the school. And yes, Whidbey is absolutely amazing. Have a fantastic trip!!!

    Good lunch! I really like the days when there is just loads of random stuff that needs using up, that's where you discover the best combos! Ahh I'm sad, as soon as you asked why you were going to Seattle, my first thought was 'because that's where McDreamy lives!!' (Grey's Anatomy...) - note to self: NOT REAL PEOPLE! I hope you have a great time :)

    BASTYR is amazing! if i had the money i would have been going there for my degree, but i didnt so i chose another school on the eastside of WA. Have a blast in my hometown! its been so gorgeous there the last week, i hope you get to see all of nature's wonders.

    You should check out case western reserve university in Cleveland...they have a great combined internship/masters program with university hospitals
