Goooooooooooooooooood morning!
I leave for New England today!!! SO excited for the first ever Stonyfield Blogger Barnstorming Tour. I’ll be live blogging all weekend and I hope you will enjoy following along as I milk cows and learn all about organic food! (New to the blog and wondering what the heck I’m talking about? Check out this post.) Thanks to everyone who submitted questions – they were great and I’m excited to find out the answers for you! (If you haven’t submitted a question yet, feel free to keep them coming!)
Anyway! I made something delicious last night I must share. It was so easy, too!
My parents were in town briefly and came over for dinner. I had plans to head out on the town afterward with some old coworkers, so I had to come up with something quick and easy, but of course delicious!
Enter: Pan Seared Balsamic Vinaigrette Chicken!
I LOVE cooking/marinating chicken with salad dressing. It makes it really juicy and flavorful for minimal calories! What’s not to love?
I didn’t have enough time to marinate the chicken, so instead I just grabbed a pan, sprayed it with cooking spray, tossed in the raw chicken, and (heavily) drizzled it with Newman’s Own Light Balsamic dressing.
While the chicken was cooking, I chopped up some veggies for a salad!
Et voila!
SUPER easy and so flavorful. My parents were impressed
On my way out the door to meet my friends, I enjoyed half of one of these AMAZING macaroons for dessert:

Newmans Own dressing is the best! I love it and use it all the time. Plus, the proceeds go to good causes, can’t beat that!

I wanted to let you know that a couple of nights ago I made the scallop entree with the mashed beans and spinach. It was amazing. It looked SO gourmet and fancy, and I especially loved it because it was DELICIOUS and only used minimal ingredients. I plan to make a family dinner soon to show off the new recipe

When I don’t have time to marinate chicken/fish, I cook it in the oven with the marinade instead than cooking it in the pan. I find it more flavourful this way

Newman’s Own has such great dressings and marinades! I use them all the time, too – why reinvent the wheel?! Can’t wait to hear about the big trip to VT!

I always cook tofu in balsamic dressing to add to salads and couscous and things. Such a great idea. I wish there was a recipe for those macaroons, they look amazing!
