Goooooooooooooooooood morning!

I leave for New England today!!! SO excited for the first ever Stonyfield Blogger Barnstorming Tour. I’ll be live blogging all weekend and I hope you will enjoy following along as I milk cows and learn all about organic food! (New to the blog and wondering what the heck I’m talking about? Check out this post.) Thanks to everyone who submitted questions – they were great and I’m excited to find out the answers for you! (If you haven’t submitted a question yet, feel free to keep them coming!)

Anyway! I made something delicious last night I must share. It was so easy, too!

008

My parents were in town briefly and came over for dinner. I had plans to head out on the town afterward with some old coworkers, so I had to come up with something quick and easy, but of course delicious!

012

Enter: Pan Seared Balsamic Vinaigrette Chicken!

004

I LOVE cooking/marinating chicken with salad dressing. It makes it really juicy and flavorful for minimal calories! What’s not to love?

001

I didn’t have enough time to marinate the chicken, so instead I just grabbed a pan, sprayed it with cooking spray, tossed in the raw chicken, and (heavily) drizzled it with Newman’s Own Light Balsamic dressing.

005

While the chicken was cooking, I chopped up some veggies for a salad!

003

Et voila!

007

SUPER easy and so flavorful. My parents were impressed :)

On my way out the door to meet my friends, I enjoyed half of one of these AMAZING macaroons for dessert:

They are seriously to die for. I got them as part of a completely awesome out of the blue package that Amie sent me, full of health food goodies and coupons. Thanks again, Amie! :)

I’m off to finish packing! Catch you guys later from up north :)

p.s. There are still a few spots left for my free fANNEtastic food LA Boxing demo class meet up! It’s on Sunday, July 11 at 1 p.m. All are welcome :) Check out this post for more details!

That chicken sounds delish. I love using Newmans. Its one of the only dressings I like.

Is that Feta I see on your salad? NOM – that looks fresh, crisp and delicioso.

have fun this weekend!!! Can’t wait to see your pics, and get some answers on where to buy that SF Froyo other than for $6 at the Woodley Park market ;) xo

    4. Gotta love the chicken+salad combo, Anne!

Newmans Own dressing is the best! I love it and use it all the time. Plus, the proceeds go to good causes, can’t beat that!

      Hi Anne,
I will be sure to make this!
I wanted to let you know that a couple of nights ago I made the scallop entree with the mashed beans and spinach. It was amazing. It looked SO gourmet and fancy, and I especially loved it because it was DELICIOUS and only used minimal ingredients. I plan to make a family dinner soon to show off the new recipe :) I was also surprised that it didn’t take long at all to make. Thank you so much! This is my new go-to site for great meal ideas! :)

    7. When I don’t have time to marinate chicken/fish, I cook it in the oven with the marinade instead than cooking it in the pan. I find it more flavourful this way :)

I always cook tofu in balsamic dressing to add to salads and couscous and things. Such a great idea. I wish there was a recipe for those macaroons, they look amazing!
