I made something delicious last night I must share. It was so easy, too!
My parents were in town briefly and came over for dinner. I had plans to head out on the town afterward with some old coworkers, so I had to come up with something quick and easy, but of course delicious!
Enter: Pan Seared Balsamic Vinaigrette Chicken!
I LOVE cooking/marinating chicken with salad dressing. It makes it really juicy and flavorful for minimal calories! What’s not to love?
I didn’t have enough time to marinate the chicken, so instead I just grabbed a pan, sprayed it with cooking spray, tossed in the raw chicken, and (heavily) drizzled it with Newman’s Own Light Balsamic dressing.
While the chicken was cooking, I chopped up some veggies for a salad!
Et voila!
SUPER easy and so flavorful. My parents were impressed

Have fun at the Stonyfield Tour, I can’t wait to see your answers to the questions!
Have a blast!
That chicken sounds delish. I love using Newmans. Its one of the only dressings I like.
Ditto! Newmans is the way to go.
Is that Feta I see on your salad? NOM – that looks fresh, crisp and delicioso.
have fun this weekend!!! Can’t wait to see your pics, and get some answers on where to buy that SF Froyo other than for $6 at the Woodley Park market
xo
Would you expect anything less than feta?!
MISS YOU!!! Play date next weekend pho sho!
ha , of course not! Feta = betta. you knooow.
See you SOON!
Seriously, this DC-chick would really like you to stop traveling.
Gotta love the chicken+salad combo, Anne!
Wish you a great weekend and trip
Newmans Own dressing is the best! I love it and use it all the time. Plus, the proceeds go to good causes, can’t beat that!
Hi Anne,
I was also surprised that it didn’t take long at all to make. Thank you so much! This is my new go-to site for great meal ideas!
I will be sure to make this!
I wanted to let you know that a couple of nights ago I made the scallop entree with the mashed beans and spinach. It was amazing. It looked SO gourmet and fancy, and I especially loved it because it was DELICIOUS and only used minimal ingredients. I plan to make a family dinner soon to show off the new recipe
Lauren
Aw yay! I’m so glad it was a big hit! I love that recipe
When I don’t have time to marinate chicken/fish, I cook it in the oven with the marinade instead than cooking it in the pan. I find it more flavourful this way
Have a great time this weekend! Can’t wait to hear/read all about it
Can’t wait to read about your Stonyfield tour! I was so happy you won that
Aw thanks
I’m so jealous about the Stonyfield tour!! Please have fun! I want to know all about the milking.
(Yes, I’m really immature.) hehe

Have a blast this weekend! I can’t wait to hear about your experience and all you’ve learned!
Have fun on the tour!!
Newman’s Own has such great dressings and marinades! I use them all the time, too – why reinvent the wheel?! Can’t wait to hear about the big trip to VT!
That looks super! And look forward to seeing the trip blogs. Stonyfield should be great fun.
I always cook tofu in balsamic dressing to add to salads and couscous and things. Such a great idea. I wish there was a recipe for those macaroons, they look amazing!
