Pumpkin Pie Smoothie

I told myself I would wait until it was officially fall to start sharing pumpkin recipes. From here on out, though? Get ready for lots of my favorite orange fruit (yes, it’s actually technically a fruit, not a veggie)! :) First on the list? This delicious Pumpkin Pie Smoothie creation I whipped up last week.

A couple weeks ago, at Matt’s friends Rob & Noelle’s wedding, we received a fun recipe booklet as a wedding favor. Flipping through the book, I was happy to see a ton of healthy and creative recipes. The one that caught my eye immediately, though, was a pumpkin pie smoothie recipe.

Since reading that, I had pumpkin pie on the brain, so much so that I made a slightly out of the way trip to the grocery store on the way back from a work meeting just to buy a couple cans of pumpkin. The check out lady probably thought I was super weird.

Worth it. :)

Using the recipe from Rob and Noelle as inspiration, I whipped up my own version of it using the Almond Breeze vanilla almond coconut milk, which is SUPER delicious if you haven’t tried it, btw.

The recipe came out even better than I hoped. The vanilla almond coconut milk adds creamy flavor, the banana adds sweetness, the pumpkin has you covered on the nutrient front, and the spices amp up the pumpkin pie flavor.

Pumpkin Pie Smoothie

Prep Time: 5 minutes

Get in the mood for fall with this healthy and delicious smoothie. Great as breakfast, post-workout recovery, or an afternoon snack! If you’re having the smoothie after a hard workout or want a little more staying power, feel free to also add 1 scoop of protein powder to the mix.

Ingredients (1 smoothie)

  • 1 small very ripe banana
  • 1/2 C pureed cooked pumpkin (canned or fresh)
  • 3/4 C Almond Breeze vanilla almond coconut milk
  • 3/4 tsp. pumpkin pie spice
  • 1 C ice

Instructions

Throw it all in a blender, blend, and enjoy!

    YES! I have been enjoying so many of these the past week or so, and sometimes I will add in a little Greek yogurt and protein powder to make it EXTRA thick and “ice-creamy”….yum!!!

    I’ve made a smoothie similar like this. So tasty! You can throw in some vanilla protein powder for a protein boost, too. :)

    Guess it’s officially pumpkin season! Everything made with pumpkin and squash looks so good right now. Gonna have to try this smoothie – vanilla almond coconut milk sounds great.

    Hey Anne! I’d love to hear how your diet has changed since starting marathon training (maybe a post if others are curious too?). I’m guessing you are eating a lot more/having to make sure you consume enough. Are you hungrier overall? Needing more fats, proteins, or carbs? I’d love to hear your personal story and also the nutrition science behind any changes in diet.

      I’m definitely eating more on long run days and the day after long runs (especially hungry the day after!) – just hungrier overall. Eating the same stuff, just more, although craving more protein/meat for sure!

    I am definitely going to buy some pumpkin for my smoothies! This sounds so good. I always use Almond milk, and sometimes coconut milk yogurt, which makes them even smoother. Thanks for the inspiration!

    Oh, I need to try this tomorrow morning! I’m a sucker for all things pumpkin, unfortunately all the seasonal stuff at Trader Joe’s is sugar-laden – except the pumpkin puree.

    Use a frozen banana. It makes it more like a milkshake! Delicious!!!

    Anyone have any suggestions for substituting the banana? I’m diabetic and the banana is not allowed. Any suggestions would be welcome!!
