Are sweet potatoes healthy?

Sweet potatoes are highly nutritious! They’re packed with antioxidants, Vitamins A, B6, and C, beta-carotene, potassium, and fiber. Plus, they can help with inflammation and support eyesight and heart health.

Additionally, they’re filling, so they’ll keep you full and satisfied!

Best Recipes with Sweet Potatoes

I love how versatile sweet potatoes are. They can be roasted, mashed, stuffed, and even blended into smoothies! Their sweet-and-savory flavor means they can be used in tons of different dishes.

Below, I’m sharing some of my favorite healthy sweet potato recipes, ranging from breakfast ideas to comforting dinners and beyond.

Chicken & Sweet Potato Harvest Bowls

I absolutely love roasted sweet potato on salad – it gives the salad more staying power in addition to tasting good!

These harvest salad bowls with sweet potato and roasted chicken are the epitome of fall! They’re packed with flavor and wholesome ingredients, like apples, kale, and brown rice, and drizzled in a creamy balsamic dressing.

It’s the perfect lunch recipe to keep you full and satisfied all day long.

Spiced Sweet Potato Smoothie

If you’ve ever had a pumpkin spice smoothie, this sweet potato smoothie is similar (but maybe even better)! It’s lightly sweet and earthy, super creamy, and full of warm spices.

Plus, the flaxseed and Greek yogurt add plenty of protein to keep you nourished!

Baked Sweet Potato Fries

I couldn’t do a sweet potato round up without including some sweet potato fries, now could I?!

Say hello to the perfect healthy side dish for practically any main: baked sweet potato fries! They’re seasoned with cumin for an extra kick of flavor, and super easy to make.

Serve them with your favorite dipping sauce – I love them with salsa and a squeeze of lime for a Mexican-inspired flair – or there’s always ketchup, my all time favorite condiment. 🙂

Savory Sweet Potato Casserole

Sweet potato casserole is one of the most popular Thanksgiving dishes, but have you ever tried a savory version? I actually like it so much better!

Mashed sweet potatoes are topped with a nutty, herby bread crumb crust and baked to golden brown perfection. Try it – you won’t regret it!

This casserole makes a great weeknight dinner side as well as being the perfect addition to any holiday meal spread.

Taco Stuffed Sweet Potatoes

This easy vegan dinner comes together quickly and with minimal prep time with this simple sweet potato microwave hack! Stuff it with your favorite taco toppings, like black beans, bell peppers, and diced avocado.

Top it with a drizzle of avocado lime crema for even more deliciousness. And if you’re not looking for a vegetarian meal, add some rotisserie chicken on top to give it even more staying power!

Sweet Potato Coconut Muffins

Sweet potato, warm spices, sweet-tart dried cranberries, and shredded coconut come together for these healthy fall muffins!

They’re nutritious (thanks to the whole wheat flour, flax, and sweet potato) and have a lovely, soft texture. Plus, they don’t have any butter or oil!

Vegan Sweet Potato Coconut Curry

Cozy, comforting coconut curry is made extra nourishing with the addition of diced sweet potatoes, lentils, and brown rice! This vegan sweet potato curry is a healthier comfort food that’s perfect for fall and winter.

Spices, coconut milk, and Thai basil really elevate the flavors here – don’t skip them!

Mediterranean Sweet Potato Hummus Bites

Cute, right?! This fun appetizer works for both summer and fall! Sweet potato rounds are topped with creamy hummus and a Mediterranean-inspired bruschetta.

Everyone will love this easy, gluten free, and healthy appetizer – great for summer or fall barbecues, holiday parties, or any occasion!

Sweet Potato Breakfast Burritos

Roasted sweet potatoes make a delicious filling for breakfast burritos! Pair with soft scrambled eggs, black beans, sliced avocado, and more roasted veggies for a delicious, filling breakfast.

These veggie egg burritos are perfect for meal prep, too! You can make a batch ahead of time, freeze them, then reheat and enjoy them throughout the week. (Check out the post for tips if you want to freeze and reheat later.)

Seafood Chowder with Sweet Potato

Want to switch things up? Try this seafood chowder with corn and sweet potato! It’s lighter than traditional chowder, packed with veggies, and studded with soft scallops and white fish.

This nutritious soup is a must-try for any seafood lover!

Sweet Potato Black Bean Enchiladas

These cheesy vegetarian enchiladas are stuffed with goodness like sweet potatoes, black beans, bell peppers, spinach, and sautéed mushrooms. They’re the perfect combination of healthy and comforting!

Plus, they’re so flavorful and satisfying, even meat eaters (like my husband!) will love them.

Sweet Potato Hash with Poached Eggs

Need a simple and healthy brunch idea? This sweet potato hash with poached eggs is easy to make, dairy free, and gluten free – so everyone can enjoy it.

The smoked ham is optional (bacon would also be awesome), but it adds even more savory flavor. So tasty!
