Chilly weather always has me craving soup, chili, and cozy meals! I’ve put together a bunch of easy chili recipes and healthy soups for when you’re craving comfort.

A bonus: soup and chili recipes are often big enough for leftovers, and freezer-friendly, too!

I’ve shared quite a few soup and chili recipes here on the blog over the past 10 years (!), so I thought it might be helpful to round them all up together in one post. This post was originally published in 2018, but it has been updated; bookmark or pin this post so you have it on hand next time you have a chili or soup craving! Enjoy.

Easy Chili Recipes & Healthy Soups

1. Instant Pot Chicken Tortilla Soup

This Instant Pot chicken tortilla soup comes together in 30 minutes flat, making it a perfect weeknight dinner. Plus, it’s super flavorful and an instant crowd-pleaser!

This Mexican-inspired soup can also be made in a slow cooker if you just start cooking earlier in the day.

The addition of sweet potatoes make this recipe especially unique. But if you aren’t a big fan of them, you can always leave them out!

2. Chicken & White Bean Chili Soup

If you’re looking for a light and refreshing chili recipe: this is it! It’s quick to make, but you can make it even quicker by using pre-cooked or rotisserie chicken.

I like to call this recipe a “chili soup” because it’s a cross between chili and soup! Perfect for when you’re in the mood for something filling and hearty, but not too heavy.

3. Butternut Squash Turkey Chili

This delicious twist on turkey chili is one of my favorite recipes for cold weather. The flavors compliment each other so well!

It’s a hearty recipe: packed with veggies, beans, brown rice, and savory ground turkey. Serve it hot, topped with plain Greek yogurt, shredded cheese, or avocado (if desired).

4. Creamy Mexican Chicken Chili Soup

If you’re looking for a quick weeknight meal idea, you’ll love this creamy Mexican chicken chili. It’s hearty and satisfying, and it makes great leftovers!

The keys to this soup are the spices – cumin, in particular (a big favorite of mine) – and the addition of hummus to make the broth creamy.

5. Raspberry Chipotle Black Bean Chili (vegan)

This is a super unique (and tasty!) take on the classic chili recipe! It’s sweet and spicy, and it comes together in less than 30 minutes. Not only that, but it’s vegan!

With just 8 ingredients, this is an easy weeknight meal option, and you use frozen raspberries, so no worries if they are in season or not!

6. Thai Coconut Chicken Soup

This Thai coconut chicken soup recipe is delicious, veggie-packed, and super easy to make! With exotic flavors and a healthy broth, this soup looks pretty AND tastes great.

7. Sweet Potato Lentil Chili (vegan)

Sweet potatoes are all the rage these days, and for good reason! They’re packed with nutrients and they taste delicious.

This recipe throws them together with hearty lentils, spices, and even more veggies for a perfect combo. Bonus: it’s vegan!

8. Slow Cooker Chicken Moroccan Stew

Looking for something totally different to make for dinner? This slow cooker chicken moroccan stew is hearty and super versatile (you can serve it over rice, quinoa, or couscous).

I love how easy this recipe is. Just cut up the veggies, toss everything into the slow cooker, and wait for it to finish! After that, there’s just one quick step of shredding the chicken, and you’re good to go.

9. Turkey & Veggie Barley Chili

Chili is one of my favorite comfort foods for cold nights, and this combination of turkey, barley, and tons of veggies makes this chili the perfect meal to satisfy that craving!

The barley is my favorite addition to this chili. The chewy texture is hearty and satisfying, and adding a whole grain to the recipe makes this chili super filling and high in fiber.

10. Veggie-tastic Minestrone Soup (vegan)

This veggie-packed, easy minestrone soup recipe is SO quick, filling, and delicious! It’s the perfect fast weeknight dinner to use up all the veggies in your fridge, and a great healthy soup recipe.

It somehow manages to be light and filling at the same time, so you feel full but not heavy. One of my favorite go-to soups!

    Yum, I need to make some of these. I tend to make a soup over the weekend to bring for lunches during the week. I make the same things over and over so it will be good to add some new ones into the rotation! Our favorite soup these days is Pinch of Yum's instant pot wild rice soup. We add 2 raw, chicken breast - they fall apart/shred really easily. We end up adding more stock to the soup after shredding the chicken, otherwise the soup is SUPER thick. https://pinchofyum.com/instant-pot-wild-rice-soup Another favorite is this lentil soup.     Oh man, all of these look so good! Thanks for sharing this round up of healthy soups. It's cold here in Michigan, and I want nothing more than to dive into a hot soup, but so many of them are filled with creams and junk. Can't wait to try some of these!
