An Egg Casserole Last Day of Class Packed Lunch

Good morning!

Guess what? Today is the last day of classes! Crazy how quickly this first year of grad school has flown by. I just packed up a quick lunch featuring my latest recipe — Smoked Salmon & Vegetable Egg Casserole!

Mmmmm I’m so excited to eat that later today! I started with a piece of my egg casserole on a whole wheat wrap:

Then added on some leftover black beans:

Extra smoked salmon and feta cheese for good measure:

And, finally, some steamed spinach! I grabbed a huge handful of fresh baby spinach, tossed it in a bowl, and put it in the microwave for a minute so it would take up less space in the wrap!

As per usual, my wrap was exploding. Thank goodness for tin foil! I securely wrapped the bottom:

Then rolled it all up and sealed the top closed. Now I can eat it at school by peeling off pieces of the tin foil at the top bit by bit as I eat, and the bottom will not fall apart on me since it will still be in the foil 🙂

To enjoy with my massive wrap I packed some pre-sliced orange:

That’s my favorite way to eat an orange 🙂

And for afternoon snacks I packed a Chobani pineapple Greek yogurt:

And a baggie of this awesome spicy trail mix:

I’m heading off to class — this morning for our last Biochem class we have a review session, and then after a few hours of studying Biochem I have my final Epidemiology class late this afternoon! We already turned in our final for Epi so I’m all done with that after today 🙂 Sweet!

Have a great day! And stay tuned — I went to my second bikram yoga class last night (thanks to all of your great advice) and will be back tomorrow with my thoughts 🙂

    Great idea with the foil on the bottom of the wrap!! Which looks crazy ass delicious by the way!! I eat oranges like that too; makes me feel like i'm 5 again, but I still eat them like that ;)

    good luck with your finals and congrats on being almost done with the semester! :) I do love wrapping up leftovers for lunch. That smoked salmon is making me crave some for tomorrow morning! :)
