Colorful Plates

Hello, hello! How were your weekends? Here are some of the highlights from ours.

First up: a Father’s Day brunch feast! We had quiche, bagels, fruit salad, and a slaw salad. Plus some unpictured super thick cut bacon that Matt cooked on the grill that was ready a little later – bacon dessert, don’t mind if I do.

We also had some great chicken, mushroom, and bean tostadas with slaw and radish this weekend – these were a Sun Basket meal left over from the week.

Matt requested steaks for dinner last night for Father’s Day, so steaks it was! Ready to go on the grill (and into the oven for the potatoes):

Delish! Here’s my go-to recipe for roasted potatoes: Garlic Herb Roasted Veggies.

Our other two dinners this weekend were delivery! We got burgers, fries, and salad from Liberty Tavern in Arlington on Friday night:

And Saturday night we got sushi. It was a steamy, hot weekend so sushi was nice and refreshing!

Some other unpictured meals from the weekend were my flour free breakfast pancake and high protein oatmeal, both shared with Riese, and we made tuna salad with Greek yogurt for lunch one day, too!

The big excitement of the weekend was that I went to my first in-person yoga class since early March! A local yoga studio was hosting an outdoor, socially distanced yoga class on Saturday morning as a fundraiser for Movement for Black Lives, and I was happy to join to support it. 

It was amazing to do yoga not on a screen – I really miss yoga classes! It sprinkled on us a little at the end (which actually felt nice because it was so humid out) but thankfully the full blown thunderstorms waited until we were done.

What did you eat this weekend? Anyone go to a restaurant? If so, tell me what it’s like because I barely remember… restaurants are open here in a limited capacity but we haven’t ventured out yet!

    Mmmm, sushi! That looks so good! I'm pregnant with our 2nd so sushi is off limits to me right now. I'm kicking myself for not having any earlier this winter/spring! But oh well, I will have to treat myself to some in December (via take out) when the baby is born. We got take and bake pizzas for lunch yesterday. We can get 3 meals out of the 2 pizzas we get for the 3 of us so it's a super cheap take-out option! It hit the spot yesterday. We are having burgers tonight so are just a few days behind you on that meal. Other than that, I made my husband's favorite meal on Friday night (lentil enchiladas) as an early Father's Day dinner as he wouldn't be home for dinner on Sat or Sun due to golfing (lucky guy - the gift of time to golf was his Father's Day gift) and helping out at this mom's. Our toddler shockingly loves lentil enchiladas so that meal is always a hit in our house.

    Glad you could get in an outdoor, distanced Yoga class - nearly normal! And have not ventured to a restaurant yet, though still helping most nights by getting takeout! Not sure conditions in the Capital Region are quite ready for anything other than outdoor dining, and with nightly thunderstorm threats, that is difficult!

      Agreed, I would be open to an outdoor meal at a restaurant, but not indoors yet... will stick to takeout with the thunderstorms lately!

    Some restaurants in my area (Ontario, Canada) are open. I went to a patio on Thursday for some drinks and tacos with friends. It was exciting and delicious!

    Your Father's Day plate looks so yummy!! I've been out to a few restaurants. In Dallas, things have been opening up for a bit. The restaurants are very good about keeping the tables distanced well. It has been nice to get back to a somewhat 'normal' social routine.
