Dietetic Internship Day 1 & The SPIbelt Winner!

Yesterday was my first day of my summer public health dietetic internship! It was fun to have an excuse to get dressed up again 🙂

I had a great first day! The Registered Dietitian who my classmate, Diana, and I will be working with seems really cool and willing to do anything she can to help us fulfill our list of requirements and get the most out of our internships. It should be a fun summer 🙂 She was also totally cool with me taking pictures at our community nutrition-related events and sharing what we’re doing this summer, so stay tuned!

I packed up enough food for an army to bring to work yesterday — being super hungry with nothing around = disaster.

First up — lunch!

An enormous arugula, beet, and kidney bean salad:

With a little baggie of balsamic vinaigrette dressing inside the lid of the container:

Plus half of a leftover chicken and black bean burrito bowl from Chipotle! Matt and I kicked the soccer ball around for a couple hours on Monday night and by the time we got home and showered, it was already 8:30! He LOVES Chipotle and offered to pick it up for us… clearly I couldn’t refuse 😉

To refresh my palate at the end of the meal — orange slices:

And for afternoon snacks, I packed a hearty slice of my Vegan Figgy Apricot Spelt Bread:

I brought the slice on the left. (Just kidding.)

Plus some almonds in case all hell broke loose:

Turns out all hell did not break loose; therefore the almonds will be staying in my purse for tomorrow.

In other news, last night I dropped Matt off at the airport — he’s in NYC for the day and tonight he leaves from there with some college friends to go to PERU to hike the Inca Trail! I am dying of jealousy and so wish I could go with. They were trying to work it so I could come, too, but sadly between school and my internship this summer the timing just wasn’t going to happen for me. I told him he has to do a guest post for you guys all about the trip when he gets back 🙂 He’ll be gone for 2 weeks, sadface!

I’m off to internship day 2 — and then it’s time to come home and get organized because I’m leaving for Fitbloggin’ tomorrow straight from work! So pumped 🙂

    I can't wait to hear more about the internship - public health is the field I wanna focus on in my internship or for my master's! That's so cool he's hiking in Peru. I would love to go to Peru - my mom taught english there for a year after college and has some awesome pictures.

    It's great when you get a supervisor/boss like that, isn't it? I've been very lucky so far in that respect. It makes such a huge difference when someone is actively ensuring that you get all the experience you need - and more! I'd love to hike the Inca Trail in the future. A few people I knew from uni did it last year and it sounded fantastic.

    Peru is my #1 place I want to visit. I have this obsession with hiking Machu Picchu ever since I read "Three weeks with my brother" by Nicholas Sparks (highly recommend that book!) I'd be super jealous if I were you! Definitely have Matt do some recap posts!

    I met my fiancé on a group hike as he was conditioning for the Inca Trail, and he left a couple of weeks later. I too was dying of envy but I did ask him to remember to bring me some Peruvian coins. Aaaand now we're getting married in a week and a half! Wow! He really enjoyed the trip and I'm sure Matt will too!

    Can't wait to hear all about your internship! I carry a baggie of almonds around with me ALL the time, just in case! I also did that with a banana...but after a few days in my purse it was sad, bruised, and a little gross. So I'll stick to almonds, trail mix, and dried fruit. :)

    I was so excited when I saw I won the contest I forgot to mention Matt's trip to Peru. I'll bet that trip will be so interesting. I love anything to do with past history. If I had not married so young ( I'm happy) I would have loved to pursue archeology. Can't wait for his guest post.

    What a fun internship--so awesome that you are able to get started on your internship in a coordinated program! Will you complete part of your food service and clinical rotations this summer too?

      In this program, since it's an MPH, we actually don't do a formal food service internship - we did some hours this spring in our food service class but nothing big. This summer is just public health, next summer is all clinical, and the fall of 2012 will be an internship of our choice - either public health related or clinical. We can basically design our own!

    I am green with envy over Matt's trip to Peru. Hiking the Inca trail is a once in a lifetime experience and I can't wait to hear about it. I hope he brought a camera. Hiking part of the Appalachian Trail is on my bucket list.

    Matt's so lucky! I only hiked (and camped) the Adirondack's....and I thought that was a awesome trail Please wish him a fun trip for me! (but relay that he'd have a much better time, ahem if you were there ;-) Congrats on day #1.... You look so pretty! Kudos on being "beautiful & brainy!" :-)

    I love all the color in your lunch. Very smart to pack enough/extra food. It's no fun being hungry and only having unhealthy vending machine options for a snack.
