Easy Salmon Salad Dinner Idea

Morning, friends! It’s a GORGEOUS one here in DC today – much cooler, less humid, and breezier! Loving it. I didn’t have plans to run today but I did enjoy a nice long walk to and from a coffee shop this morning for some early morning AnneTheRD client meetings. I’m thinking a little evening kayaking might be in order, too!

On the menu earlier this week, we enjoyed some salmon! Even Matt liked it, and he normally isn’t super into fish. 🙂 Perfect summery and light but satisfying dinner!

This was a Blue Apron meal (paid for by us), but it would be really easy to recreate at home. Just pat dry the salmon, season with a little salt and pepper (I used some garlic salt, which was a nice bit of added flavor), then sear in a pan for a few minutes on each side or until it’s cooked the way you like it. I usually leave the middle a little rare.

It was served atop a super fresh and summery salad of corn (sliced off the cob and then sautéed in a pan briefly), peppers, tomatoes, cucumbers, shallots, and basil. I added some additional tomato and peppers, plus some extra basil from our little window box (which is thriving). It was tossed in a red wine vinegar and olive oil (I used garlic olive oil) mix. Simple and tasty! Plus some toasted garlicky bread on the side.

We had some of the salmon and a bit of the salad leftover, so I turned it into a big salad the next day for lunch. I added some greens and avocado to the mix, plus some homemade balsamic vinaigrette. Yum!

And because I need carbs at lunch or I’m not satisfied, some leftover roasted potatoes with ketchup on the side. 🙂

Hit the spot!

On the workout front this week, I got in a short run (2ish miles) on Monday – I wanted to get out and move but I wasn’t feeling a longer run and I was tight on time, so I told myself to just get out there for about 20 minutes. Before I realized it I was already done, and I felt great. It was the perfect amount of time to get the blood flowing!

Yesterday morning, I hit CorePower Yoga in Georgetown with Chelsea for a 6 a.m. Sculpt (yoga + weights) class via ClassPass. My favorite instructor (Mandy) was teaching – she’s SO GOOD. By the time we finished, it looked like we’d gone swimming. #allthesweat

It was a rainy morning yesterday but super pretty with the canal in Georgetown. Love Gtown in the morning before the crowds descend!

And now, time to get back to work! I have another AnneTheRD client (via phone this time) in a couple minutes, and then I need to buckle down and spend some time this afternoon working on a presentation that I’ll be giving at FNCE (the annual dietitian conference) in Nashville in October. I’ll be speaking with fellow dietitians Regan Jones and Danielle Omar about understanding SEO and website analytics and using them smartly to grow blogs/websites and nutrition practices. It should hopefully be an interesting and helpful session – I’m really excited that our proposal was accepted! For those attending and booking flights soon, we speak on Tuesday morning (the last day of the conference) at 8 a.m., so stick around until then if you can!

    Loving this salmon recipe. I can do a bit rare. But thank you for not serving it with raw oysters 0_0 LOL!

    I always overcook salmon, so I'm glad to hear you suggest leaving it a bit rare. And yes, I love ketchup- especially with roasted potatoes. If I am able to make it to FNCE this year, I will be on the look out for you!

      I always used to overcook salmon at home, too, until I realized the reason I liked restaurant salmon more was that it was a bit rarer! Hope to see you at FNCE! :)
