Goat Cheese Shrimp with Rice & Veggies

Ingredients:

  • Brown rice
  • Shrimp (fresh or frozen)
  • Veggies (I used asparagus and broccoli)
  • Veggie or chicken broth (preferably low sodium)
  • Goat cheese
  • Olive oil
  • Garlic
  • Salt and pepper to taste

Instructions:

  1. Just sauté your veggies and shrimp in a drizzle of olive oil and minced garlic (to taste) until cooked through, then add in a splash of veggie or chicken broth and a hefty sprinkle of goat cheese. Stir until mixed thoroughly.
  2. Serve over brown rice and with salt and pepper to taste!
