Is there anything more comforting than a muffin? They’re soft, delicious, and so versatile: they can be both a healthy breakfast and a filling snack! So today, I’m sharing my favorite healthy & easy muffin recipes, just in time for fall.

Healthy & Easy Muffins

I’ve separated the muffin recipes into three categories: fall muffin recipes (including muffins made with veggies – they’re delicious, I promise!), muffin recipes with fruit, and savory muffin recipes. You’ll be sure to find something that fits your mood!

I haven’t published any brand new muffin recipes recently, but longtime readers will remember that I went through a serious muffin phase back in the earlier days of the blog – I was literally posting a new muffin recipe every week for awhile there. It was quite a delicious time in my life!

Have no fear – my love for muffins remains strong, but I seem to make my usual favorites over and over again nowadays. So, without further ado, here they are all rounded up in one post – enjoy!

Fall Muffin Recipes

These pumpkin muffins have a great flavor, the perfect amount of sweetness, and a nice, soft texture. They’re nutritious, too! A fabulous fall snack.

Spiced Butternut Squash Muffins

Full of autumn flavor and delicious spices, you’ll be craving these butternut squash muffins all year round!

Sweet Potato Coconut Muffins

I’m a huge fan of sweet potato, and I love that it goes well in both sweet and savory dishes. These muffins use sweet potato, coconut, and cranberries for a blissful combination.

Vegan Lemon Zucchini Muffins

If you’ve ever had zucchini bread, you know that zucchini is great in baked goods; it adds moisture and a refreshing flavor. Add in a little lemon zest, and you’ve got yourself a killer muffin. Oh, and they’re vegan, too!

Dairy-Free & Gluten-Free Pumpkin Muffins

These scrumptious pumpkin muffins feature a mixture of almond and coconut flour, so they’re gluten-free (and dairy-free, too)! They pair perfectly with warm coffee or tea.

Vegan Carrot Cake Muffins

If you love carrot cake but want something a little lighter, these whole wheat carrot cake muffins are the way to go. 

They’re really moist, sweet but without much added sugar, and have lots of nutritional power from the whole wheat pastry flour, walnuts, raisins, carrots, and applesauce. This is one of my all time favorite blog muffin recipes!

Fruit Muffins

These muffins are a little sweet, a little spicy, and a whole lot of tasty. I feel like pears don’t get enough attention as a fruit, but they absolutely shine in this recipe!

Gluten-Free Peach Muffins

The muffins are light and fluffy and filled with bites of juicy peaches. Plus, they’re both dairy-free AND gluten-free!

Banana Spelt Muffins

These banana spelt muffins are delicious and super nutritious! They’re nice and moist, and filled with healthy fat and fiber. A great snack to keep that afternoon hunger at bay.

Savory Muffin Recipes

Veggie Scrambled Egg Muffins

This is one of my oldest blog recipes that I’ve made again and again over the years – I love these veggie egg muffins for breakfast meal prep! They’re super easy to make ahead, and they’ll keep you full until lunch.

Plus, you can mix & match with your favorite veggies (or whatever you have on hand)!

Hard-Boiled Egg & Cheddar Muffins

These savory, gluten free muffins have a hard boiled egg hiding inside them – cool, right?! They’re so tasty, and are packed with protein. An easy grab-and-go breakfast!
