9 Healthy Vegetable Side Dishes (Easy & Tasty!)

Easy Vegetable Sides

Whether you’re serving chicken, salmon, tofu, or something else, you’ll find something tasty to pair it with here.

And if you want to keep things super simple (yet still so tasty!): here’s how to roast frozen vegetables (including instructions for asparagus, broccoli, cauliflower, and Brussels sprouts). It’s so convenient and just as nutritious as roasting fresh vegetables!

And now, without further ado, here’s some vegetable side dish inspiration:

Maple Cinnamon Roasted Veggies

Sweetness from the maple syrup and cinnamon pairs deliciously with root vegetables and Brussels sprouts for a surprising and mouth-watering vegetable side.

The veggies get nice and caramelized, and go especially well with a savory main dish. It’s all about that flavor balance!

Stuffed Portobello Mushrooms with Feta

“Meaty” portobello mushrooms are piled high with a flavorful filling of feta, spinach, artichokes, white beans, sun dried tomatoes, and even more goodness and then baked to perfection.

This dish is great for dinner parties or holiday gatherings, or even just a quick weeknight meal! It looks fancy, but is actually quite simple to make.

You can also use small mushrooms (like baby bella mushrooms) to make this into an appetizer instead.

Shaved Brussels Sprouts Salad

Crunchy apples, dried cranberries, and pecans are nestled in a bed of shredded Brussels sprouts for the perfect autumn-inspired side dish. (But really, you can enjoy it anytime!).

It’s topped with shaved parmesan and a lovely lemon mustard dressing.

Miso & Honey Roasted Brussels Sprouts

These crispy Brussels sprouts are tossed in honey and miso for an easy, crave-worthy side that goes with pretty much anything.

Brussels sprouts nay-sayers won’t know what hit them. 😉

Healthy Mashed Sweet Potatoes

These lightly sweet mashed sweet potatoes are creamy, with elevated flavor from a hint of warming spices. They’re the perfect fall or winter side – comforting and nutritious at the same time!

Plus, this dish only requires four ingredients. Simple, yet so tasty.

Crunchy Broccoli Cauliflower Salad

Crunchy broccoli and cauliflower are tossed in a tangy yogurt dressing and sprinkled with pepitas for a veggie side that’s almost too tasty for its own good.

It’s super simple to make, too! Great for picnics, packed lunches, etc.

Baked Buttercup Squash with Goat Cheese

Buttercup squash is roasted and caramelized to perfection, then topped with salty crumbled feta and sweet pomegranate seeds.

This is a great option if you want to switch things up and try something a little different!

Baked Sweet Potato Fries

I’m a huge fan of baked sweet potato fries. They’re a more nutritious alternative to traditional fries, plus they have more flavor and go great with tons of different dips.

These are always a hit, and they go perfectly with burgers and chicken fingers. You can dip them in ketchup, salsa, honey mustard… whatever floats your boat!

Herb & Garlic Roasted Vegetables

You can’t go wrong with roasted veggies tossed with an herby, garlicky seasoning. It pairs well with everything and it’s super versatile. Just mix it up with your favorite vegetables (or whatever you have on hand).

And that’s it: some of my favorite healthy vegetable side dishes! I love how easy and no-fuss these are. Not to mention ridiculously flavorful!

    I haven’t had stuffed mushrooms in a long time! Must try these. I’m also a fan of sweet potato fries - with ketchup!

    My go-to vegetable side is always roasted vegetables! I just love the versality and that we can eat on them for several different meals. This is an awesome post!
