Recent Eats: Quinoa + Lentil Grain Salad Bowl

Hey friends! Wow – thank you for all the awesome stroller recommendations on my 24 week pregnancy update post yesterday! It seems the majority of you guys recommend having 2 strollers in the mix – a lightweight, portable, travel-friendly stroller to keep in the car and a jogging stroller for walking (and running if I want to, but not until the baby is old enough to safely run with). Now, to figure out which ones to get. Decisions!!

I am getting this post up a bit later than usual today because I was inspired to do a little cooking this morning! I had been craving a quinoa/bean/veggie grain salad bowl all week, and since I’m working from home today I decided it was time to make it happen.

I am LOVING the tomato/basil combo right now, so clearly that had to be incorporated – so refreshing and summery!

Also in the mix: peppers, quinoa (just cooked with water), canned lentils, and avocado. Topped with a homemade vinaigrette that was a mix of lemon juice, olive oil, red wine vinegar, and dijon mustard.

I enjoyed it atop some baby kale and with some (pasteurized) feta in the mix, because, duh, feta is delicious. Plus salt and pepper to taste!

Btw, I have a whole post on mix and match grain salad bowl recipes if you’re interested. 🙂 I didn’t measure anything today, but that post includes actual recipes!

As for dinner last night, I had a fun meal out with my college BFF Turner who is in town this week to do some research for her fellowship! I was so excited to get to see her – she stayed with us last night and will be here until tomorrow afternoon, so we have time to do another fun dinner this evening.

I was in the mood for some (cooked) sushi and Turner was on board, so we hit up Nooshi on 19th street since we were both downtown. We started with some edamame and the seaweed salad, and then shared a bunch of cooked sushi. My fave is always the eel roll – so good!

As for this morning, I whipped us up some of my microwave banana oatmeal to fuel up before walking the dogs.

I ended up hitting up the pool afterward (Turner was already on her way downtown by that point) for a quick swim, too, which felt lovely – swimming is seriously the best when pregnant! Makes the aches and pains basically disappear.

Time to tackle my email inbox before closing out this workweek. Have a great day and a relaxing weekend, my friends!

p.s. My latest pregnancy craving is chicken fingers… I love my corn flake crusted chicken fingers recipe from years ago, but I’m thinking I need to try my friend Gina’s recent variation: not-fried chicken. I’m curious to see if I like the corn flakes or the puffed rice/brown rice flour approach better!

    Looks yummy! Just an FYI on running with a baby, you don't have to wait until they are 6 months old and sitting up. Didn't know if you knew, but you can get a car seat converter for the BOB so your infant car seat can snap into the BOB. Our pediatrician cleared me to start running with Emma when she was only 6 weeks old as long as it was on smooth terrain. Not like I was doing anything crazy on post partum runs :)

    I love such posts! They always give me (better) ideas on how to use up the produce in the refrigerator. I was curious about the bamboo (I think) bowl that you are serving the quinoa salad. Where did you pick those up? Would you remember?

    This salad looks so yummy. Do you have dressing recipes posted somewhere ? I love your dijon mustard - lemon juice combo but when I try it out it doesn't seem to have the right texture... I would love to have the right measures if you have them :)

      Yes! It's basically my balsamic vinaigrette recipe just minus the garlic (too lazy most of the time to include this!). I switch out the balsamic for red wine vinegar sometimes, too - just use the same measurements.

    Yum! This looks amazing! I love lentils but havent really added them to salad before! I love my graco stroller--its so lightweight and turns on a dime. It's also really easy to fold up because we live in a small two bedroom condo.
