Slow Cooker Chicken Tikka Masala

Ingredients

  • 1.5 lb boneless, skinless chicken thighs (optional - if omitted, add 2 cans of chickpeas, drained/rinsed)
  • 1 onion, chopped
  • 1 tablespoon grated ginger
  • 3 cloves grated garlic
  • 2 tablespoons garam masala
  • 2 teaspoons paprika
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground turmeric
  • pinch of cayenne pepper, optional
  • 1 15-oz can coconut milk
  • 1 28-oz can diced tomatoes
  • 1/4 cup tomato paste
  • Instant brown rice, cilantro, yogurt, and wilted spinach for serving (optional)

Instructions

  1. Place all ingredients in a slow cooker and stir gently to incorporate. Cook on low for 6-7 hours, or high for 3-4 hours.
  2. Serve over brown rice and spinach, topped with cilantro and yogurt (if desired).
