Slushy Hike

Hi friends! Did you watch the Super Bowl last night?

I honestly kind of forgot it was even a thing that was happening! Matt and I watched the last episode of 11.22.63 (really good show, definitely recommend!) and then he watched the second half of the game and I went to bed.

I’ve never been into football but I like the hang out/social aspect of the Super Bowl usually, plus the commercials and food (so many good snacks! my fave is my Healthy Seven Layer Taco Dip), but of course this year we weren’t having friends over or doing anything this year so, meh. 

Bed seemed much more appealing, especially since I’ve been getting a lot more tired again. I’m almost 25 weeks so only a couple weeks from the third trimester now… feels like I have a very long way to go still so I’m hoping the tiredness holds off a bit longer! 

 I did pull it together to get out for a little hike on Saturday morning, though! Bump in the wild:

We went back to Turkey Run Park in McLean, which we discovered a few weeks ago. It was relatively mild out which was a nice treat, but the trails were still more snowy/muddy than we thought they would be!

There were definitely some slippery parts… had to walk gingerly!

Our little hiker did great, though. 🙂 We were glad we put her in snow boots, that ended up being a really good call!

We packed lunch to eat on the trails so we had more time to work with before heading home – pitas stuffed with rotisserie chicken, pickles, tzatziki, and arugula. Next time I’d put it on regular toasted bread since the pita got a bit soggy, but it was still yummy. 

We also shared an apple and some carrots, cucumber, and bell pepper that I sliced before we left.

In other news, I’m pretty proud of myself, friends, because my omelette game has gotten very strong lately. Pretty, right?

This one had cheddar cheese and ham, my fave combo.

Other recent eats included avocado toast with bacon + egg…

Another round of chicken noodle soup that we started with some canned soup and then added extra chopped rotisserie chicken + some baby spinach to to amp it up:

As for dinners, we had a yummy shrimp and noodle veggie stir fry one night recently (have you tried my Peanut Sauce Stir Fy with Shrimp yet?)

Another night we had a pizza, salad and ravioli night for a random Italian-themed mash up.

We also turned the rest of the Italian stuffed peppers I was testing for the blog into a pesto pasta dish – yummy way to reinvent the leftovers by chopping them up and throwing them over pasta!

The pesto we used was one we made at the end of the summer with our massive basil plant and froze the rest of because it made so much.

Stay tuned for the Instant Pot stuffed peppers recipe coming at you on Wednesday – it’s a good one! And if you want to try the pesto pasta leftover variation with the peppers, I’d do that with the Italian variation, not the main Mexican version. 😉

I’ve got another recipe coming at you on Friday this week, too – it’s a cherry chocolate overnight oats that might be fun for Valentine’s Day. I also highly recommend my Chocolate Covered Cherry Cookies if you are in the mood to do some baking! 

I hope you have a nice week! I’m crossing fingers we don’t get any more snow – there’s some in the forecast for later this week and I’m totally over it and ready for spring so we can do lots more playing outside… being in the house all day is getting super old! I was really glad yesterday’s snow that hit us didn’t end up sticking!

    Thanks for the reminder about the shrimp and peanut sauce stir fry. We love peanut sauces! It’s been a snowy month for you guys! We haven’t gotten the big snow storms but instead have horribly cold weather. The high yesterday was -3!!! I hate this weather as it’s just too cold to be outside anymore than you have to to run errands/etc. I can’t wait for warmer temps. I would take snow over this kind of weather! But I am definitely dreaming of spring and hope it arrives early enough for me to enjoy some nice weather before going back to work in late April!

    I made your peanut sauce stir fry with shrimp yesterday! It turned out great - just had a little problem getting the peanut butter to soften. I will definitely make it again. Thanks!

    Good for you for getting out to hike despite the slushiness! Nothing like fresh air! I’m impressed with that omelet! I don’t make them too often so always seem to lose my skills in between.

    I am 13 weeks with my second (my daughter is 5) and I am sooooo ready for the fatigue to go away!!! It’s crushing. Hopefully soon!! Sounds like a fun hike. Gosh I can’t even think about spring until May. We’ve got a few months of snow till in Canada!
