When I think of autumn food, one of the first things that comes to mind is squash! Here are some of my favorite squash recipes for fall and winter.

Squash is delicious simply roasted and enjoyed either as a side dish or salad topper (hot tip: try it on my Harvest Bowls instead of the sweet potato), but there’s so much more you can do with squash than just roast it!

From butternut squash to acorn squash and beyond, all of these recipes are guaranteed to put you in the fall spirit. Enjoy!

Healthy Recipes with Squash

Most of the squash recipes below feature butternut squash, because it’s a tried and true favorite, but I also included a few different types of squash to switch things up!

There are also some pasta recipes, baked goods, and even a breakfast recipe to enjoy. So let’s get to the list!

Instant Pot Butternut Squash Soup

The perfect autumn soup: silky smooth butternut squash with apples, sage, and (optional, but highly recommended) bacon. Toss in some pepitas for some crunch!

Baked Buttercup Squash with Goat Cheese

Buttercup squash may not be the most well-known fall/winter squash, but it’s just as tasty as the more popular squashes!

This lovely side dish brings together roasted buttercup squash, goat cheese, juicy pomegranate seeds, and even more autumnal goodness.

Looking for a fall-inspired pasta dish to enjoy this season? This chicken sausage pasta is tossed with roasted butternut squash and sage butter sauce for a crave-worthy meal.

This cozy vegan meal is much quicker and easier than you might expect because it’s made in an Instant Pot!

Comforting lentils make a delicious plant-based bolognese sauce that gets piled onto the spaghetti squash, which is roasted right in the Instant Pot.

Spiced Butternut Squash Muffins

Have you tried squash in muffin form?

I promise you won’t be disappointed – especially with this winning combo of butternut squash, warm spices, and dried cranberries. Or, swap out the cranberries for chocolate chips. You do you!

    I’ve never been much for winter squash but these all sound very good! I like to bake so might try the biscuits first.
