Track Tuesday + Easy Breakfast and Lunch

Before I get into today’s post, a quick note (because I needed a reminder, too): today is one of the last days to order gifts online to make sure they arrive in time for Christmas!

Anyway! In other news, it’s Tuesday – that means I was up and out at the track this morning! The sun was just starting to rise when I arrived – so beautiful. And so warm – it was in the 60’s!

Today’s workout was straightforward: 800’s (2 laps around the track). A couple of the others and I did a warm up (also included on my watch) and then we all started the 800’s. We were supposed to do 6 to 8 of them with 1 minute rest in between. Fast turnaround so we had to keep the pace in check!

I did six 800’s then cooled down with a couple of the others (not included on my watch time). Great workout! Our pace was right around 1:50 per lap.

Post-track breakfast was leftover brown rice (cooked with tomato paste, some cabbage, and basil I think? It was from a Blue Apron meal last week) topped with two fried eggs. I also threw some arugula on the plate, too, and heated it along with the rice. The only thing missing was avocado – we’re out, the horror! Actually, we’re pretty much out of everything now that I ate this… time to hit the store!

Zara kept watch. I know I should keep her off the table, but she’s so gosh darn cute, I can’t help it!

In other news, I packed my lunch yesterday for the first time in ages (I’ve been having a fair amount of fun lunch dates lately – especially since there are so many new healthy and delish places downtown!). I went for an old fave classic: a tuna wrap!

Is it just me, or does tuna always make you think of Jessica Simpson? “Is this chicken, or is this fish?”

Aaaaaanyway, I mixed my tuna/chicken with mashed avocado and a squirt of dijon mustard. Topped with arugula! Zara was very excited because tuna meant she got to have a little, too. 🙂

I like the taste/texture of the Ezekiel wraps but I find they fall apart – wrapping it up in foil for transport is nice because it also holds it together! Then I eat it by ripping off bits of the foil as I go so it stays together.

I paired it with an orange and my favorite Kombucha – GT’s Kombucha in gingerade. Matt and I are OBSESSED. So good!

I will leave you all with an exciting announcement for any of you who might have missed it: the Serial podcast is BACK for a second season!!! I was SO excited and I already listened to the first episode yesterday on my commute (they release one episode per week, so now, I wait…). Any other Serial podcast fans out there?

    Any tips for finding track workouts or groups in different areas? I tried doing a sprinting workout the other day at home and there was just too much impact on the concrete! Good workout though and awesome pace!

      Public high schools usually have tracks you can use for free to avoid pavement... as for a group, I'd look at the websites of any local running stores - that's who mine is through. Or, check meetup.com!

            Just wanted to say I found the group and ran with them tonight! Ironically we did the exact same workout 6 sets of 800. I was too embarrassed to ask them, do you shut off your watch during the recovery or no? Thanks again!

              Yay! That's awesome! Too funny it was the same workout. I always stop my watch during our breaks because I want the watch to show what I did/the paces I was at during the workout!

    Love Serial and I was so excited to see a new season!! We're flying to my in-laws this weekend so I am trying to hold off on listening to it so that I have something to keep me busy on the plane :)

    Great track workout! I was loving the weather this morning during my run! I'm also obsessed with the Gingerade flavor....and with Newlyweds reruns/quotes. Lunch today was leftover crockpot chicken taco chili with 1/4 avocado (I can't imagine being out of avocado!).

    I love Serial. I didn't listen to season one until all the episodes were out, so I binge-listened to the whole thing. I was going to wait and do the same thing...but I just caved and downloaded episode one. Can't wait to listen during my commute tomorrow...

    I can't not post when there is a picture of Zara, haha!! Eggs is about the only thing my body agrees with as far as breakfast options go ( I MISS oatmeal soooo much) but I need to amp it up. I'm getting to the point of hating eggs....
