If you’ve never bought persimmons before… please go buy some. Aren’t they cute?

I was feeling creative yesterday and this recipe for Cinnamon Vanilla Sautéed Persimmons was born! It’s super easy to make and VERY versatile.

Make a big batch of this on a Sunday, then enjoy it throughout the week! I especially loved the persimmons atop nonfat plain Greek yogurt.

The tart yogurt went perfectly with the sweet spiced persimmons.

They were delish on top of oatmeal, too!

Cinnamon Vanilla Sautéed Persimmons

Makes two servings

Ingredients:

  • 2 small persimmons, chopped into bite sized pieces
  • 1/4 C skim milk
  • 1 tsp. maple syrup
  • 1/2 tsp. vanilla extract
  • 1/4 tsp. cinnamon
Instructions:
In a medium sized skillet, combine all ingredients. Bring to a simmer and sauté persimmons about 5 minutes, or until liquid boils off. Serve alone, with plain yogurt, or atop oatmeal. Enjoy!

I just did an hour of P90X yoga (felt sooo good to stretch my sore legs!) and now I’m off to work — as I mentioned, I’m working this week at my old office (where I worked as an editor) since I got home so early for break! Stay tuned for some new 5 minute packable lunches this week :)

Oh, and they posted the official race results for the Jingle All the Way 10k I ran yesterday here in D.C. — my official time was 51:29! I also discovered I came in 97th out of 795 women in my age group. Top 100, baby! Sweet :)

    It’s funny, I just saw someone else post about persimmons recently and then saw them in whole foods yesterday. I debated with myself about whether I should get them. In the end I decided against them, but this looks like a fansastic application and something I’ll have to keep in mind for next time.

    Never tried them! I wonder if my regular grocery store would have them or if I’d need to venture to whole foods. They look delicious – I had leftover squash/apple/cranberry bake (made with brown sugar and butter subst.) and it was incredible.

    I never knew what a persimmon was before reading this post! I thought it was a member of the tomato family. So it’s more like a fruity taste I take it? Either way, I want to make this ASAP!!!

    How do you pick a good persimmon?

      Honestly, I have no idea! I’d suggesting googling that question :) I would just pick it based on if it felt ripe or not – soft to the touch but not overly mushy.

    I love persimmons! Just make sure you’re buying the Fuyu kind (the ones pictured here–they look squat, like tomatoes). The other kind, Hachiya, are longer and have pointy bottoms. Those are astringent and will dry out your mouth–very uncomfortable. I love to put persimmons in salads, and my husband picked up the hachiya and I didn’t notice until I took a bite.

    I think I had a bad experience with a Persimmon because I really didn’t care for it but I can’t understand why I wouldn’t.

    This is funny because I actually bought one this weekend since WHole Foods had them on sale. However, I had no clue about it. I bit into it and found it gross. Turns out I guess you have to make sure they are ripe because if not they will taste nasty.

    I love the Fuyu persimmons. I usually eat them raw,
    but I will certainly try these recipes next time.
