Ready in Minutes Dinner: Saucy Tomato & Artichoke Chicken

Today, I present to you: the easiest dinner ever. Delicious and nutritious, too!

When Matt and I go to CrossFit together, we usually end up going in the late evening, so by the time we get home around 8 or 9, we want something really quick and easy. This is a meal I used to make all the time but completely forgot about until I unearthed it from my recipe collection for an AnneTheRD client looking for quick and tasty chicken dinner ideas!

The secret is diced tomatoes – I use these Muir Glen brand ones that have basil and garlic added in. So tasty.

Here’s everything else we used!

To make this dish, simply drizzle a pan with a little olive oil, then throw the raw chicken, the can of tomatoes, and any other veggies you want (we used artichoke hearts and fresh mushrooms) on top.

Stir it around so it’s evenly distributed on top of the chicken.

We added on a huge pile of raw spinach as well, then popped a lid on the dish and let it cook for about 10 minutes or so on high, until the chicken was cooked through.

Et voila! That was easy. We served it with a side of quinoa but you could easily leave the quinoa out or have another veggie – perhaps roasted sweet potatoes? – on the side. Or just have the dish by itself! This dish got a big thumbs up from both me and Matt. Easy and tasty. We’ll be making variations of this more often now that I rediscovered it!

Speaking of my nutrition counseling clients, time to get back down to work! I had a new in-person client yesterday and have another new client via Skype later this afternoon. So far, I’m really loving having the private practice. It’s been so great to work with others one-on-one and to feel like I’m really helping people to be happier and healthier. I love it! I’ve been working with an interesting mix of clients, too – some that want help with GI issues or IBS, some dealing with specific medical conditions, and some looking for help with weight loss or intuitive eating. It’s also been great to have a mix of the counseling plus freelance writing/blog work. I like being busy and doing a lot of different things so it’s a perfect mix. Since I started the private practice (www.AnneTheRD.com) in February, I’ve had about 20 clients sign up, most of whom have signed up for multiple follow up sessions with me as well after the initial assessment. I’m happy to say I also just added two testimonials to my business website from clients that I’ve been working with on a continual basis for a couple months now. So far so good! :)

I’ll also be spending some time later today packing because I’m flying off to Los Angeles tomorrow morning! I’ll be in Santa Monica for a couple days for a fitness event with Jamba Juice. Any tips from those of you in that area for fun things to do/places to eat? I’m so excited!

      Ah, great question! :) We used two chicken breasts, but you could easily add more! Just increase the cooking time a little and if you add more than one more chicken breast, you might want to add an additional can of tomatoes, too.

    I looove artichokes, especially with chicken! I am from Cali but live in the Northern part so not close to LA unfortunately. Otherwise I’d so be there! Sounds like a blast.

    Oh man, I wish I could attend the event! I used to live in LA and worked in Santa Monica (right by the Promenade Jamba Juice!) but moved a few months ago. Sounds like a good event – have fun!

    I’ve been ambivalent about artichokes (I know, it’s crazy) so this sounds like the perfect dish for me to commit to them. ;-)

    Oh, I would have loved to attend Thursday’s event but I have a meeting I can’t get out of. It sounds awesome. I live in San Diego, but LA is just a two-hour hop, skip, and jump away. :)

    Sadly, Campanile–my favorite restaurant in LA–has closed. Susan Feniger’s Street is great. If you’re in the mood for Mexican, try Red O.

    Ditto to the suggestions above for M Street Kitchen (and the adjoining pizza restaurant at Stella Rossa Pizza Bar), True Food Kitchen and Primitivo.

    If you like sushi, try Sugarfish. If you like Spanish tapas, try Bar Pintxo. If you are up for a quick sandwich from a Santa Monica classic, check out Bay Cities. Other great SM favorites are the Yard (little brewpub – good for beers and apps), Ivy at the Shore (more of an old SM classic), Milo and Olive, and Huckleberry – great for breakfast!

    Pinkberry for frozen yogurt and Cafe Crepe on Third Street in the promenade offer a variety of delish crepes. The fresh strawberry with nutella with a touch of fresh whipped cream is amazing. The promenade also has street entertainment as does Venice Beach, but I enjoy bike riding down toward Malibu. Also there are tons of mountain trails nearby. Have fun!

    I’ve got to second the rec for True Food (Foods?) Kitchen. I’ve only been to the one in Scottsdale, AZ, where my parents live, but it is seriously yummy. Their seasonal salads are amazing, and so are the juices.

    Urtth Cafe is good. You’d really like it. If you can find the Kogi BBQ truck go there. It’s usually in Venice on Saturdays. So good!

    This dish sounds great! I’m going to try it tonight and also throw in some zucchini and summer squash that I have. Question…do you drain the artichokes?

      If the artichokes are canned in water, yes. If they are canned in olive oil, drain a little but leave some in for flavor!

        This was so tasty! Even my husband loved it! I had half a can of black beans in the fridge so I served it over the beans and some brown rice. I also added the zucchini, squash and some fresh green beans (felt great to use up a bunch of stuff in the fridge!). I’m adding this to my regular recipe rotation. Thanks Anne!
