I’ve always loved eggs. Not only are they delicious and versatile, but they’re also nutritional powerhouses (packed with protein, iron, and other vitamins and minerals!). Since I have lots of tasty egg recipes on my blog, today I wanted to share some of my favorite sweet and savory brunch recipes with eggs!

Brunch Ideas with Eggs

You can’t go wrong with a veggie-packed frittata or a savory omelette, but I have also included some brunch ideas you may not have heard of below, like savory mushroom and avocado oatmeal or berry lemon baked quinoa.

There are lots of yummy brunch recipes with eggs to choose from – it all depends on what you’re in the mood for and/or the season you’re in! Now, let’s get to the list.

Savory Brunch Recipes

Goat Cheese Frittata with Spinach

This creamy goat cheese frittata is super easy to make, but looks fancy, so its perfect for a stress-free brunch!

It’s packed with spring vegetables like spinach and mushrooms, and sprinkled with fresh chives. This is one of our absolute favorite go-to recipes – and it’s also great for meal prep. 

Sausage Egg Casserole

This sausage breakfast casserole is packed with eggs, melty cheese, and veggies for a comforting brunch recipe!

We always look forward to this dish around the holidays, but it’s delicious anytime of year. The vegetables can be switched up too, depending on what your family likes or on the current season!

Apple Omelet with White Cheddar

This delicious omelet brings together the flavors of sharp white cheddar and sweet sautéed apples for a combination that will rock your taste buds! Plus, fresh rosemary adds an interesting and unique twist.

It’s especially perfect for fall when apples are in season, but can be enjoyed any time of year.

Healthy Breakfast Tacos with Avocado Crema

If you’re looking for an easy and versatile brunch idea, serve these breakfast tacos as a breakfast taco bar!

The base ingredients (eggs, tortillas, and cheese) stay the same, but you can go wild with the rest (vegetables, beans, toppings). Everyone can make their favorite egg taco!

They’re extra delicious topped with avocado lime crema – just sayin’.

Crustless Asparagus Quiche with Goat Cheese

This crustless quiche – essentially a frittata by a different name – is studded with green veggies like asparagus and peas, plus sweet red peppers and creamy goat cheese. Not to mention the delicious eggs that make up a majority of the dish!

With minimal prep time and mostly hands-off cooking, it’s a great choice for relaxed brunches.

Smoked Salmon Hummus Toast with Soft Boiled Eggs

I love the jammy centers of soft-boiled eggs, especially on toast – like in this easy smoked salmon hummus toast!

It’s so flavorful but also super easy to make, with barely any cooking involved. Diced red onion and fresh herbs add even more flavor.

Savory Oatmeal with Eggs

Savory oatmeal might sound a little strange, but it’s actually SO delicious!

This creamy oatmeal features sauteed mushrooms, sliced avocado, and peppery arugula, all with a jammy fried egg on top. Easy enough for a weekday breakfast, but fancy enough for a weekend brunch!

Smoked Salmon & Goat Cheese Omelette

Creamy goat cheese, tender smoked salmon, and fresh herbs make delicious fillings for this easy, flavorful omelette!
 
It’s perfect for any occasion, whether it’s a casual weekday breakfast or a fancy brunch recipe. Plus, you only need a handful of ingredients and 10 minutes to make it.

Savory Herb French Toast

Here’s another savory recipe that’s inspired by its sweet counterpart: french toast!

This one swaps out the traditional vanilla, cinnamon, and maple syrup for fresh herbs, goat cheese, and arugula. It’s even more delicious with avocado and a fried egg on top.

Smoked Salmon Breakfast Egg Casserole

Salty smoked salmon and lots of chopped veggies come together with baked eggs and melty cheese for a drool-worthy breakfast casserole! It’s easy to make ahead and great for feeding a crowd.

Plus, you can easily swap out the smoked salmon for a different protein, like sausage or bacon, if you want – or leave it out altogether. You do you!

Butternut Squash, Prosciutto, and Goat Cheese Strata

Here’s another egg-based breakfast casserole that looks beautiful on a brunch table: prosciutto and butternut squash strata with goat cheese!

It’s all baked in a bed of soft egg-soaked bread for the ultimate brunch casserole – perfect for gatherings or holidays.

Sweet Brunch Ideas with Eggs

Overnight Crockpot French Toast Casserole

Picture this: french toast in casserole form! It’s easier to make for a crowd, can be made ahead of time, and customizable.

Just prep the ingredients in your slow cooker insert the night before, let it sit in the fridge overnight, then turn it on in the morning to cook.

I love this french toast casserole topped with blueberries, bananas, pecans, and a drizzle of maple syrup. But you can use whatever you like!

Lemon Pancakes with Ricotta

Ricotta cheese and eggs make these lemon pancakes wonderfully fluffy! They’re packed with lemony flavor and topped with an easy blueberry chia jam that pairs deliciously.

These are especially perfect for spring and summer, but can also be enjoyed year-round.

Banana Baked Oatmeal

Simple baked oatmeal with ripe bananas, chopped nuts, cinnamon, applesauce, raisins (or other dried fruit) – what’s not to love?! It’s warm and comforting, and can be topped with fresh fruit and/or a drizzle of nut butter.

Cranberry Orange Bread

I love this bread during the wintertime and around the holidays!

It’s super festive, packed with cranberries and zesty orange, plus chopped pecans for crunch. It’s lightly sweetened and made with whole wheat flour!

Banana Pumpkin Spice Pancakes (Gluten Free)

These pumpkin spice pancakes with banana and chopped pecans are the ultimate fall brunch dish!

They’re warm-spiced and comforting, and pair deliciously with a dollop of Greek yogurt and/or drizzle of maple syrup.

Berry Quinoa Bake with Lemon

Quinoa dishes don’t always have to be savory! Bright berries, lemon zest and juice, and sliced almonds are baked into this breakfast quinoa dish for zingy summery flavor.

It’s like baked oatmeal, but with quinoa for a unique and lovely texture.

Banana Protein Pancakes (Gluten Free)

These banana egg pancakes are packed with protein and super versatile – you can serve them with any toppings you like! I love berries and sliced almonds during the summertime. 🙂

Plus, they’re easy to make, gluten free, and don’t require a lot of ingredients. Simple yet delicious!

This pancake is one of our frequent weekday go-tos (I usually do the microwave version on weekdays for speed – instructions in the post) and my kids both love it, too.
