Chapel Hill Study-Fest: Day 2!

Good morning from Chapel Hill!

Another big day of studying under our belts – check! Yesterday, I started the day at the gym with my friend Maria. She belongs to a gym that lets her bring guests every once in awhile, so we hit up her favorite exercise class together yesterday morning. It was HARD – a combination of weight, strength using stretchy bands, and lots of squats. Great way to mix it up and start the day!

For breakfast before leaving for the gym, we had some baked oatmeal. Yum! It was like my recipe for Baked Oatmeal (click for recipe) but minus bananas and plus berries and some heartier/chewier steel cut oats. Big fan – it inspired me to mix it up next time I make Baked Oatmeal!

Elle arrived after we got showered up and we all got ready to study. But first, an early lunch of sandwiches and salad! When I arrived, I brought a TON of salad greens with me, plus some string beans and avocado – basically anything in our fridge that was still good that would be bad by the time I got home (Matt’s out of town for work right now, too).

We sautéed the string beans in a little olive oil and garlic:

And added them to our plates, which also had tuna salad on Ezekiel bread and a combination of mixed greens, baby kale, avocado, and feta cheese. Hit the spot!

And then, we hit the books. For 5 hours. Phew!

We took one 20 minute walking break (and did some snacking, too, of course) but otherwise were really good about focusing! This test is supposed to be really hard and we refuse to be caught off guard.

After the studyfest, I met my friends Tim and Lindsey for dinner at Pazzo in Southern Village, our old home! Miss this place.

I had a delicious fish with sweet potatoes, walnuts, and bacon. It was really good! We also shared a bottle of Pinot Noir.

I was so happy to see my little friend Hayes, their son, again – he just turned 1 a couple weeks ago and is looking like such a little man! SO cute. It’s been fun to see him grow up and change every time I come visit!

And now, another big day of studying ahead! Maria and I have plans for a nice long walk this morning before Elle arrives and then tonight, Elle and I (and hopefully Lindsey!) are hitting up Franklin Street Yoga – yay!! 🙂 How I miss that studio!

    Looks like some major studying going on! Baked oatmeal is one of my favorites, but it's been a couple of months since I've made some...need to get on that!

    Are you using any RD exam-specific study materials? Or just notes/books from classes?

      We're using a combination of the Jean Inman study guide, plus the AND practice tests. I also have a practice test from Visual Veggies (http://visualveggies.com/VisualVeggies/Home.html)!
